Sometimes, after all the spice and citrus, a distinctive craving comes a’calling in this part of the world; for tomato sauce, for bread, and for cheese. Fortunately, Bangkok’s pizza scene has never been in finer fettle, with the city occupying several spots in the upper echelons of the latest addition of the 50 Top Pizza in the Asia-Pacific list.
One of those spots has been taken by Pizza Mazzie, a pizzeria run by New Yorker Jon Spearman, which serves a delicious hybrid of American and Italian pizzas, all delicately refined toppings and bases with admirable structural integrity.
The oven here is the revered ‘low dome’ Acunto, built in Naples, and the dough is light and airy, owing to its super slow-fermentation process. It arrives blistered and burnished in all the right places, with Spearman’s refined approach to toppings (he believes that there should be no more than three, as a rule) meaning the pizzas at Mazzie are surprisingly delicate and insanely delicious.
