THE IDEAL RECIPE FOR SMOKED SALMON SOUP

SMOKED SALMON SOUP

For a deliciously warming meal try this smoked salmon soup recipe and serve with ciabatta bread.

Also, this recipe can be a great time saver! Just prepare at the weekend and freeze ready to defrost on a cold, busy week night.

  • 1 onion, finely diced
  • 750g potatoes, diced
  • 500ml chicken stock
  • 500ml milk
  • 350g smoked salmon, cut into ribbons
  • a handful of parsley leaves, finely chopped
  • 1 lemon, halved
  1. Use a blender like the Russel Hobbs Desire Mini Chopper to chop the onion and potatoes.
  2. Fry the onion gently in butter, then add potatoes, stock and milk and simmer until the potatoes are very tender.
  3. Add the Smoked Salmon and dill and season well.
  4. Blend in the Desire Jug Blender.
  5. Heat everything through and add a squeeze of lemon.
  6. Serve with toasted ciabatta bread.
