THE IDEAL RECIPE FOR APPLE AND CRANBERRY BIRCHER MUESLI POTS

Breakfast is a hard meal to get right as often it centers around convenience foods which are usually pretty unhealthy. However, Kellogg’s has come to the rescue with their Ancient Legends brand, which is a delicious range of wholesome granolas, mueslis and cereals bursting with ancient grains and seeds. The collection includes rye, spelt, chia, flax and quinoa – ingredients which have been grown for millennia and offer a multitude of nutritional benefits.

The grains rye and spelt are rich in fibre and B vitamins, which help us to release energy from food and stay energised throughout the day, whilst chia and flax seeds are rich in Omega 3. Quinoa is a great source of protein, and along with flax and chia seeds contains high levels of minerals calcium and magnesium, which aid the normal functioning of the nervous system and maintenance of healthy bones.

To celebrate all thing’s breakfast here’s a recipe using the cereal that you’ll absolutely love!

APPLE AND CRANBERRY BIRCHER MUESLI POTS

Bircher muesli was invented by a Swiss physician at the turn of the twentieth century as a way of boosting his patients’ raw fruit and vegetable intake, and remains a wholesome way to fuel your morning. This recipe can be served in jars to take with you to work for a convenient nutritious breakfast when you’re in a hurry.

Serves 2

Ingredients

90g Kellogg’s Ancient Legends Quinoa apple, cranberry and chia muesli,

1 eating apple, washed and cored

75ml cranberry juice

6 tbsp fat free Greek yogurt

Honey to taste

Method

  1. Coarsely grate the apple and place in a medium bowl.
  2. Add the muesli, juice, yoghurt and mix well. If liked add a little honey to taste.
  3. Divide the mixture between 2 jars with screw top lids and chilli for at least 2 hours, or preferably overnight. Serve straight from the jar.
