THE IDEAL RECIPE FOR AVOCADO AND LIME SOURDOUGH SMASH

Serves: 4

Ingredients

4 slices sourdough bread
Olive oil for brushing
2 small avocados
100g feta, crumbled
Coriander leaves and fresh lime wedges, to serve

Method

1. Preheat a griddle pan or barbecue over a high heat.

2. Brush the bread with oil and cook for 1-2 minutes each side. Smash the avocado onto the toasted bread, and top with the feta  and coriander leaves, and squeeze over the lime wedges.

3. Sprinkle with salt and pepper, and serve.

TOASTED SOURDOUGH WITH CHORIZO & ROASTED RED PEPPERS

This recipe for toasted sourdough with chorizo and roasted red peppers, courtesy of waitrose, is blooming delicious.

  • Preparation time:20 minutes to 25 minutes
  • Cooking time:10 minutes
  • Total time:35 minutes

Serves: 4 as a starter or snack

Ingredients

2 red peppers
1 tbsp olive oil
6 Unearthed Alfresco Smoked Cooking Chorizo sausages, split lengthways (selected stores)
4 slices sourdough bread
1 clove garlic, peeled
100g ricotta
1 tbsp sherry vinegar
½ x 70g pack wild rocket

Method

1. Preheat the oven to 220°C, gas mark 7. Put the whole peppers on a baking tray and roast for 20-25 minutes until the skin starts to blister; if you have a gas hob or chef’s blowtorch you can char the skins before roasting, which will give them a smoky flavour. Transfer to a large bowl, cover with clingfilm and leave to steam for 10 minutes. Once cool enough to handle, peel and deseed the peppers, tear into thick strips and reserve.

2. Heat a little oil in a frying pan over a medium heat. Add the chorizo sausages, cut side down, and cook for 1-2 minutes. Turn and cook for a further 1-2 minutes, then remove from the pan and drain on kitchen paper.

3. Meanwhile, grill or toast the bread on both sides until golden, and rub one side with the garlic clove. Divide between 4 serving plates and spread with the ricotta.

4. Spoon 1-2 tbsp of the oil from the chorizo pan into a bowl, whisk in the vinegar, and dress the peppers and rocket.

5. Top the slices of sourdough with the peppers. Arrange the chorizo on top and finish with the rocket.

PUMPKIN AND BUTTER BEAN BROTH – THE IDEAL RECIPE FOR AUTUMN

 

Courtesy of Marco Pierre White, this chunky pumpkin and bean broth is a perfect autumn and winter warmer. Served with hot crusty bread is ideal for lunch or dinner on a cold rainy day.

Recipe serves: 8

Preparation Time: 20 min

Cooking Time: 50 min

INGREDIENTS

  • 2 Knorr Vegetable Stock Pot
  • 2 tbsps olive oil
  • 2 small onions, peeled and finely chopped
  • 3 garlic cloves, peeled and finely chopped
  • 6 small carrots, peeled and finely chopped
  • 3 celery stalks, finely chopped
  • 2 tbsps tomato puree (optional)
  • 2 x 420g tins of butter beans in water, drained
  • 500g pumpkin, peeled and chopped into chunks
  • 2 courgettes or 6–8 baby courgettes, cut into chunks
  • 1 tsp chopped fresh thyme
  • Crusty bread, to serve

METHOD

  1. First, make the stock. Dissolve the Knorr Vegetable Stock Pots in 1.2l of boiling water, stirring until thoroughly dissolved. Place the Knorr Vegetable Stock in a large saucepan and bring to a gentle simmer.
  2. In a separate large heavy-based saucepan, heat the olive oil. Add in the onion and garlic and fry for 1–2 minutes over a high heat, stirring constantly so that they soften but don’t brown at all.
  3. Add in the carrot and celery and cook for 2–3 minutes, stirring constantly. Add in the tomato puree – this will give the soup a great colour – and cook over a medium heat, stirring constantly to mix in well.
  4. Bring the simmering Knorr Vegetable Stock to the boil and add to the onion mixture. Bring to the boil, then reduce the heat and simmer for 20 minutes.
  5. Add in the drained butter beans and simmer for 10 minutes, then add in the pumpkin or butternut squash, bring to the boil and simmer for 10 minutes.
  6. Add in courgettes and thyme, bring to the boil, reduce the heat and simmer for 5 more minutes. Adding fresh thyme gives a lovely flavour to the broth.
  7. Check that the vegetables are cooked through; you want them tender, but retaining texture.
  8. I’m a great fan of olive oil and I like to drizzle my soup with a little extra olive oil just before serving, but it’s your choice.
  9. Take the soup to the table to serve. Some slices of crusty bread would go well with it.

SMOKED MACKEREL WITH HORSERADISH AND BEETROOT ON RYE

  • Cooking time:5 minutes
  • Serves: 4

Ingredients

150g half-fat crème fraîche
1 lemon, zest and a squeeze of juice
2 tbsp grated horseradish
3 Waitrose Boneless Hot Smoked Mackerel Fillets
4 slices Waitrose Rye And Wheat Dark Sourdough Bread
1-2 tbsp olive oil, for brushing
150g (about 3) cooked beetroot, thinly sliced
Small handful dill sprigs

Method

1. Mix together the crème fraîche, lemon zest and horseradish in a bowl with a squeeze of lemon juice.

2. Flake the smoked mackerel fillets (discard the skin) and stir into the sauce, being careful not to break them up too much. Season and set aside.

3. Preheat the grill. Halve the slices of bread, brush with a little olive oil and toast under the grill, about 1 minute on each side. Arrange the beetroot on the toasts and top with the mackerel and dill.

Route 500, The Black Forest, Germany

Thinking of a cake? The Black Forest (or Schwarzwald) is actually a region in southwestern Germany, famous for its winding roads and is a popular choice for road trips amongst the biker community. Some historians believe the cake got its name from the traditional outfit that was worn by women in the Black Forest. Fifty-five storeys high and three times the length of an Olympic pool, it’s luxurious, crystal clean and catered for abundantly as only the Singaporeans can. No wonder Emma from Adventures of a London Kiwi  chose this place as her favourite hotel roof terrace.

The Amalfi coast is one of our favourite stretches of sea and sand anywhere in the world, and we’re certainly not alone in this view. Talking of views, the one from the Monastero Santa Rosa is one of our favourites in the world, too. The hotel is set in an old monastery, with all the atmosphere, elegant design and graceful architecture you’d expect. That’s before we even discuss the outside. There are beautifully coiffured gardens overlooking the Tyrrhenian sea, a slim, slinky infinity pool and the serenity that only this part of the world can truly provide. Aperitives and this view – we couldn’t think of anything better, nor could Suze from Luxury Columnist.

This amazing terrace gives sensational views of some of London’s most famous, instagrammable landmarks, from Big Ben to the Shard, the River Thames and more. Moody, gothic architecture and furniture are synergetic, creating an ambience that feels wholly appropriate to the experience.

THE IDEAL RECIPE FOR SCANDI-STYLE SMORGAS (X3)

Serves: 4 – 6

Ingredients

50g Waitrose 1 Normandy Salted Butter, softened

HERRING & RADISH ON WHITE

275g jar Elsinore Herring In Dill Marinade
½ x 150g pack mixed radishes, finely sliced
½ x 20g pack dill, leaves only, roughly chopped
2 large slices Waitrose 1 White Sourdough Bread
4 tsp Gordons Mustard & Dill Sauce

ASPARAGUS, LEMON & SOFT EGGS ON SPELT

2 medium Waitrose British Blacktail Free Range Eggs
100g pack asparagus tips, trimmed
1 lemon
2 large slices Waitrose 1 Spelt Sourdough Bread
¼ punnet salad cress

BLUE, BACON & APPLE ON RYE

4 smoked streaky bacon rashers
2 large slices Waitrose 1 Wheat & Rye Sourdough Bread
½ x 150g pack Castello Danish Blue or other blue cheese, sliced
¼ Braeburn or other red eating apple, cored and finely sliced
1 tbsp chopped chives

Method

1. For the herring and radish topping: mix the herring fillets with 2 tablespoons of their dill marinade, the radishes and three-quarters of the dill. Set aside.

2. For the asparagus, lemon and egg topping: bring a small pan of salted water to the boil and lower in the eggs. Cook for 7 minutes, adding the asparagus for the final minute of cooking. Drain, then cool under cold running water. Peel the eggs and slice. Finely grate the zest of the lemon. Quarter the lemon and cut about 8 thin slices. Use the rest in another recipe.

3. Meanwhile, for the blue, bacon and apple on rye: cook the bacon in a dry frying pan over a medium heat, turning often, until crisp. Set aside on kitchen paper. Toast the breads, butter and cut in half.

4. Divide the herring and radish mix between the white sourdough toasts, add a drizzle of the mustard and dill sauce to each and top with the reserved dill and season. Top the spelt toasts with the asparagus and egg, season, scatter with the lemon zest, cress and lemon slices. Finally, layer the blue cheese, apple and torn bacon on the wheat and rye toasts, season and top with the chives. Serve immediately

5 IDEAL NOMA ALTERNATIVES IN COPENHAGEN

Noma, the multi-award winning, game-changing, ground-breaking Copenhagen restaurant, had its last service in February of this year. In its current guise, that is. Noma 2.0 is mooted to be open in December of this year and we’re seriously excited. Getting a table though, to put it mildly, is going to be even more difficult than landing a coveted spot at the original. But fear not, there are hoards of Noma alumni cooking Scandinavian-inspired food in the Danish capital.  With that in mind, here are 5 IDEAL alternatives to Noma, in Copenhagen.

108 only opened last year but has already garnered some serious praise, including a Michelin star. Kristian Baumann, formerly of Noma and Relae (another on our list) is at the helm, and the menu leans heavily on cured, fermented and pickled ingredients. Noma’s modus operandi, of foraging and preserving, is very much alive here. This is by no means a carbon copy or homage though, with a huge, open dining room and plenty of sharing dishes meaning the atmosphere is casual and convivial – the pace set more by the diners than a tasting menu. It’s a wonderful place to eat with leisure and drink in good company.

Bror

Bror is run by two former Noma sous-chefs, but has its own unique style and voice. Housed on a beautiful, narrow and cobbled road in the centre of the city, Bror feels incredibly welcoming and homely, with dim lighting and dark wood furnishings. The restaurant utilises lesser known cuts and has a commendable attitude to waste, but leans on a wider scope of Northern European ingredients than Noma did. The result is warm, humble, delicious food which is far more complex than meets the eye. A real winner in our book.

Relae

Both leaders of front and back of house are from the school of Noma at Relae, currently ranked 39th best restaurant in the world. The vibe is super laid-back, with service unintrusive in the best possible way. Diners are encouraged to pour their own wine and collect their own cutlery, but don’t let this casual approach belie expectations of the food. Confident, no nonsense cooking is king here. Vegetables are celebrated with the same thought and care as meats, and everything is seasoned and balanced to perfection.

Hija De Sanchez

Okay, so it’s not new Nordic, but this place is the bomb. Former Noma pastry chef Rosi Sanchesz opened this taqueria stand two years ago in Torvehallerne when cravings for the food of her homeland, Mexico, got too strong. The place has been so successful that a second branch has opened in Kodbyen and we wouldn’t be surprised if more followed. The Al Pastor taco is fantastic and just the thing when you’re craving fire and verve from your food to thaw the Copenhagen chill.

Radio

Another former Noma sous-chef, another amazing Copenhagen restaurant. Radio is super straight-forward in principle, with the menu listening just three or four ingredients to each dish. The cooking though, is anything but. Flavours are maximised to their full potential through careful sourcing, a dedication to seasonality and superb, grounded technique in cooking them. It’s a reasonably priced proposition too, making it a must on any hungry traveler’s dinner-time itinerary.
