But it did leave us indoors, just as every winter seems to do, and we’re itching to get back to the goods times promised by the forthcoming spring and summer seasons. Oh, they can’t come soon enough! One Final Winter Warmer
Sometimes, you can’t predict what the weather is going to be like or the mood you’re going to be in come Friday. Plus, winter only comes but once a year, so why not might the most of it and have one big winter blowout? This Saturday, you won’t be saying, ‘oh, I wish we could go out’, you’ll be saying, ‘we’re staying in and we’re going to smash it!’. What does that mean, exactly? Well, there’s an early evening in your favourite pub. There’s the finest takeaway you can find in your local area. It’s bad TV and a few extra tinnies of beer or glasses of wine in your delightful home. It’s all rubbish, effectively, but you know you love it and you can’t do this during summer!
Although your summer may be a distant memory, keep the season alive with this beautiful dessert which showcases the summer strawberry. Elegant and refreshing Strawberry Panna Cotta is the perfect pudding to impress guests. This recipe by David Moss, Co-owner and Chef at The Wensleydale Heifer, based in West Witton in the heart of the Yorkshire Dales will please even the most critical of guests!
In a pan, bring the puree, lemon juice and basil to a boil. Add the gelatine, dissolve, then sieve. Pour 1/2cm depth of the sieved mixture into each panna cotta mould and set in the fridge.
For The Panna Cotta (Prepare the day before)
Place the cream, milk, sugar and star anise in a heavy bottomed saucepan on a medium heat. Bring to a boil, then remove from the heat and set aside for one hour to infuse.
Sieve, then return to the pan and bring back to a boil. Stir in the gelatine and set aside. When the jelly is set and the panna cotta mix is lukewarm, pour onto the jelly and return to the fridge to set, preferably overnight.
For The Strawberry Glass (Prepare the day before)
Bring the puree to a boil, ass the Isomalt and boil for five minutes. Spread thinly onto a silicone mat (so you can see through it) and bake overnight in the oven at 55 C. When it’s ready it will be translucent and crisp. Break into shards and store in an airtight container.
For the Strawberry Sorbet (Prepare in advance and freeze)
Blend the strawberries with the sugar and lemon, then bring to a boil in a pan. Leave to cool then add to an ice cream machine and churn.
For The Pebbles
Whip the egg whites into soft peaks. Add the caster sugar until a firm meringue is achieved. Add the lime juice. Divide the egg white mixture into two, add the almonds and poppy seeds into one half and then fold in the other half. Place into a piping bag and pipe little drops (of 2 to 3cm circumference) onto a silicone mat.
Put in the oven at 110 C for 90 minutes until dried out. Store in an airtight container.
For The Short Crumb Base
Place all the ingredients into a food processor and blend until fine crumbs are achieved. Bake for eight minutes at 190 C until golden brown. Set aside to cool and place in an airtight container until needed.
For The Marinade
Boil the purees, peppercorns, vinegar and lime juice. Sieve, blend, cool. Dice the strawberries and drop them into the marinade. Leave for one hour.
To Serve
Run the moulds under the hot water tap for a few seconds to release the panna cottas. Assemble as in picture.

Why Go

Most of us make a New Year’s Resolution to get fitter or healthier, but just a few small changes to lifestyle and diet can also make a world of difference to our sleep throughout the year
A person’s lifestyle and what they eat and drink can have a dramatic effect on their sleep patterns, according to doctors and sleep experts. A few changes in what people consume, and when they exercise or take a break, could improve the amount of sleep achieved – which will, in turn, help to improve general wellbeing.
Carbohydrate-rich foods
According to dietician at Leeds Beckett University, Louise Sutton, eating carbohydrate-rich foods two to three hours before bedtime, such as toast or porridge, will help stimulate the release of insulin, which opens the pathways for tryptophan – the sleep hormone – to reach the brain.
Fish, fish and more fish
Eating plenty of oily fish such as mackerel, tuna and salmon, which are excellent sources of omega-3 DHA fatty acids, can improve the quality of sleep, as reported by researchers at the University of Oxford.
Breakfast
It’s often mentioned that skipping breakfast is bad for us, but why? The human body reacts to the lack of food by pumping out stress hormones, and therefore making the person more tired. A balanced breakfast provides more energy and focus, and healthy snacks during the day will maintain those levels to reduce fatigue.

Cherries are a natural source of melatonin, which helps regulate the sleep-wake cycle. Adults with insomnia who drank a glass of Montmorency cherry juice twice a day for two weeks saw sleep time increased by nearly 90 minutes, as discovered in a study from Louisiana State University.

The less exercise a person does, the more tired they can feel, which in turn means they will be even less inclined to exercise! Experts suggest going for a walk, even when feeling tired, to stimulate energy and wake up the body – even just 20 minutes a day can help.

Contrary to popular belief, eating cheese before bedtime does not give people nightmares. In fact, studies have shown that dairy products like milk and cheese promote sleep in several ways, as they include calming minerals such as magnesium and calcium, which relax muscles, as well as peptides, which have anti-stress effects. They are also a source of tryptophan, needed for the production of the natural melatonin hormone, which helps with sleep.
Caffeine bad(ish)
Reducing one’s intake of caffeine, alcohol and spicy meals in the evening is proven to help with sleep. If this still does not work, a short, controlled period of fasting has been shown to improve sleep quality and relaxation.
Dr Susan Biali M.D., nutritionist and wellness expert, suggests that a change in behaviour or routine can significantly improve your sleep. She says, “If you have trouble falling asleep at night, it may be because you don’t take time to transition properly from your busy day into bedtime. Create a wind-down routine for yourself, such as making yourself a drink, some relaxing yoga or a few moments of mindfulness. Practice finding small islands of time for yourself throughout the day, whenever you can. You’ll feel so much better, and you’ll sleep better, too.”

There is something about these fury little critters that make them seem so in tune with humans. They show empathy, sadness, can sense danger and even have personality. Moreover, owning a furry companion can have lots of positive effects on your life, both mental and physical.
With this in mind, we decided to ask Fiona Firth, Burns Pet Nutrition’s Head Nutritionist and proud dog owner of Yogi, to give us her top 10 reasons on why dogs are great companions.
GREAT RUNNING BUDDIES
Unlike your friends, your dog is not going to cancel your trip to the gym at the last minute via text. Although, come to think of it, if our dog could spend the evening ‘washing my hair 2nite’, they probably would. Joking aside, your dog will most likely be relentless in their enthusiasm for a trip to the park for a frolic, which makes them great motivators for exercise.
YOU’LL GET MOVING MORE
Not a runner? Even something as simple as playing with your pets for a few minutes each day can increase your levels of daily exercise. Owning a dog will most definitely get you up and moving, since dogs are highly energetic animals and you’ll likely have to take yours for a walk daily. You’ll easily be able to reach your daily step target if you have a canine companion keeping you on your toes, that’s for sure.
And if we’re looking on the bright side, you’ll get a workout from constantly having to clean your house, too! There’s dog hair, dirt, leaves and other debris that come into the house on their paws to deal with. Even with a “non-shedding” pet, you’ll get a workout as you still have to vacuum the dog fur – yep even ‘non-shedding’ breeds shed a little.

Research has shown that dog owners, have greater self-esteem, tend to be less lonely and are less fearful. Perfect, for those living alone, dogs not only keep them company they smother them with affection.*
THE LOVE US BACK
It has also recently been proven that dogs love us back! Scientists in California found that domesticated animals release the ‘love hormone’ oxytocin in intimate situations, just like humans! Oxytocin is the hormone that make us feel connected and form close bonds in relationships. This was detected when pets interacted with their owners.
SUPER ENTERTAINING
If you have ever seen a dog chase a spider around the room or his own tail for hours, then you will understand this point. If you haven’t, you are missing out! Dogs and their little quirks are so funny to watch.

So the brain of a dog reacts in the same way as the human brain when they hear distress, like crying. No wonder then, that they can be very comforting in a crisis, and emotional support dogs can even provide valuable help to patients in times of distress.

Getting over a broken heart is never easy. We speak to Los Angeles medical practitioner and media personality, Dr. Joseph Chambers who offers his top tips on how to overcome a break up
Can you die of a broken heart?” asks Chambers. “The short answer is yes, but man is it rare and it’s all got to do with hormones.” According to Chambers, when you’re in relationship nirvana, oxytocin and dopamine surge through your body. These are the so-called bliss hormones. They make you feel great. This goes on until you’re dumped. Then the stress hormones, epinephrine and cortisol surge, clogging up your arteries.
Rarely, this surge turns into a tsunami, and you end up with chest pain and shortness of breath – symptoms that are typical of a heart attack. But you’re not having a heart attack; this nightmare scenario is called Takotsubo syndrome, aka stress cardiomyopathy, aka stunned myocardium syndrome, and is exceedingly rare. In most of us, our hearts function normally but are still “broken” in their own unique way. Here are Dr. Chambers’ tips on surviving the “everyday-break-up” that’s not a “tsunami:”
One
Deal with the break up head on. It’s over. Accept that it’s over. Move on.
Two
No social media stalking. Checking your ex’s Facebook page every hour for morsels of info about what they’re up to will only prolong the agony. And be prepared for the inevitable status switch to “single.”
Three
Avoid old haunts that you went to as a couple or anything else that reminds you of him or her, at least for a little while. Otherwise you’re just rubbing salt in the wound.
Four
Avoid desperate texting, late night drunk dialing… Why? It doesn’t work.
Five
Above all, no drunk sexting. An unwanted sext is anti-erotic and is about as welcome as a fart in church.
Six
Nothing wrong with hitting the Haagen-Dazs or having a couple of beers – but I do mean a couple. Binging on beer or vodka shots or whatever won’t bring back your loved one.
Seven
Avoid losing your friends because you won’t shut up about your ex. There’s a fine line between healthy venting and obsessing about your ex to the point your friends want to break up with you. This is where professional therapists come in.
Eight
Finally, if the therapy’s not working, plus you feel weepy and a bit out of control, give yourself a break

There are some huge sporting events going on this year starting in autumn and going into winter, including the NRL Grand Final, the Ashes, and the AFL Grand Final. The AFL Grand Final
If you want to get a feel for Australian sport at its most passionate level then you need to check out Aussie Rules, and what better game to go to than the Grand Final? The ultimate AFL match will be played on 30th of September this year at the electric Melbourne Cricket Ground that has a capacity of over 100,000. The reigning champions are the Western Bulldogs, who claimed the title last year after a 62-year Premiership drought. The Bulldogs beat Sydney Swans by 22 points, and they made history by winning the final from seventh-place on the ladder for the first time. The Melbourne-based club are well favoured to make it all the way again this season, and are in with a chance of claiming back-to-back titles for the first time in their history. Now that would be a cracking way to start your Australian sporting tour.
The NRL Grand Final
Following on from that is a game with a similar shaped ball but a wildly different set of rules. The last match of the rugby league season is the Grand Final held at the ANZ Stadium in Sydney. The winning team is crowned Premier champions. The last match was a close-fought contest between Melbourne Storm and Cronulla-Sutherland Sharks in front of over 80,000 fans. The Sharks just edged it, winning 14-12 in an epic encounter. Melbourne are favoured to bounce back this year, though, with the best nrl odds placing the Storm at 7/1 to win. The 2017 match takes place on 1st of October, and tickets are already available for what will surely be a sell-out event.
The Ashes 2017
The greatest cricketing event on the planet is due to take place in Australia this year, and will begin in the final week of November. The Ashes will surely attract thousands of tourists to the southern hemisphere for the encounter between England and Australia. England are the current holders, but they have only managed to win on Australian soil twice in the last thirty years, so expect a tough contest. For those wanting to travel and watch cricket, the Ashes series is a prime opportunity. The fives tests will be held in Brisbane, Adelaide, Perth, Melbourne, and Sydney. The Perth match could be a particularly momentous occasion as it will be the last time a test is held at the famous WACA Ground before the opening of the new Perth Stadium.
These events span from the end of September through to 2018, and those who want to hang around for the New Year can also catch the Australian Open in January. The Open is the first major Grand Slam of the year and marks the start of the tennis season. For epic sporting occasions, it’s hard to rival Australia.
