HOTEL REVIEW: AT.MOSPHERE DUBAI – THE IDEAL PLACE FOR COCKTAILS IN THE TALLEST BUILDING IN THE WORLD

If you like your cocktails with a view, and suave, sophisticated service to match, then At.mosphere Is certainly worth a visit. With panoramic views of the Dubai coast and food served at 1350 foot high, this is a vibrant hot spot for discerning holiday-makers.

IDEA

Contemporary European Cuisine and fusion cocktails are served in a sleek surrounding to accompany panoramic views at the top of the tallest building in the world. Suddenly vertigo doesn’t seem like such a problem.

LOCATION

Driving up to the Burj Khalifa, anticipation grows as you arrive at the tallest building in the world. With its bundled tube architecture growing more slender as it reaches skywards, it’s a site to behold. The building stands proud and tall among what appears as an otherwise flat sky line in the centre of Dubai – you can’t miss it.  

THE WELCOME

Upon arrival polite, dapperly dressed hosts greet you and guide you to a special private elevator leading straight to the restaurant. We soon learn this is in fact the world’s fastest elevator, travelling at such high speeds that you are provided with sweets to ease the pressure changes during your ascent. Surprisingly, despite travelling 123 floors the thrilling ride is smooth and silent.

The doors open to a decadent hallway, shining modern architectural stairs a real focal point and centre piece, with a vast window offering breath-taking views of Dubai as the backdrop. On our visit, clear blue skies and brilliant sunshine filled the space. Through the sheer height of the restaurant, alone you are transported out of the bustle of the city below to near tranquility above, where traffic looks like toy cars on a map. 

STYLE AND CHARACTER

Walking into the restaurant, smooth camel tones compliment the mahogany walls and thick pile carpet, whilst soft tempo music provides adds to the aura of relaxation which welcomes you to the handsome venue. The relaxed vibe integrates two of the most popular dining choices; a lounge and restaurant, whilst the sleek and stylish interior ensures a contemporary vibe.

Despite the well thought out ambience, the highlight of the setting is the panoramic views across Dubai’s sky line.  6pm seems the perfect time to enjoy a cocktail whilst the sun slowly descends , creating a romantic hue across the city. World Islands, a cluster of Islands built by man that are visible from space and quite frankly, a wonder of modern civil engineering, are visible.

 

The venue has been pieced together harmoniously, allowing for the seamless transition from calm ambience by day into the more energised vibe in the evening. The wide-appeal of the place seems obvious. As evening descends, an in-house DJ spins lounge-music, creating a trendy spot for those wishing to be seen.

The view from the toilets overlooks the famous dancing fountains. Set to music, they go off every half an hour and are a beautiful sight. We suggest you frequent the ladies room, if only to admire the fountains.They make the descent back down to earth more appealing. 

FOOD

The menu is created by Jerome Lagarde, a French national with over 20 years’ experience across the globe. He has a rich history of working in Michelin starred restaurants, across three continents, including the landmark Sens & Bund in Shanghai. Since his arrival at AT.mosphere he has shaped the menu to celebrate seasonal trends, priding himself on innovation whilst only ever using freshly sourced, high quality ingredients. 

The innovative influence was apparent during our visit – we noticed Japanese influences on a fillet of beef with a karbayaki sauce, and oysters on ice served on a picturesque platter with miniature condiments to match.

For dessert we ordered praline filled mini crepes, served with soft cheese and raspberry coulis. The dessert’s presentation was flawless; the scarlet sauce adding drama to the dish’s overall aesthetic. Appearances were a telling indication of taste – the rich chocolate was offset perfectly by the creamy soft cheese.

DRINK

The cocktail list is extensive and boasts a varied range where the classics are well represented, but a deviation to more experimental fusions isn’t shyed away from. A suitably opulent drink made using 24K gold seemed appropriate for the surrounds. 

WHY GO

Although you can’t just walk in – booking is essential and there is a minimum spend – it’s worth the blowout. It’s not every day that you can say you dined and drank at the world’s tallest building. For these bragging rights alone, go to At.mosphere. You won’t regret it.

EDUCATE YOURSELF

The reason knowledge is power is that it provides you with the tools to solve problems. One issue those who don’t go to university risk is a lack of education, both formal and informal. If you want to carve out a career in construction, the knowledge gap needs plugging. Start by considering extra courses which will boost your skill set.

Phu Quoc, Vietnam, is an island on the up, with new hotel developments and restaurants cropping up as fast as the island will have them. Regardless of this, the island’s cuisine is at its best when staying true to its traditional trades, namely fish and peppercorn cultivation. The best restaurants we experienced on the island all had this in common – day boat fresh seafood and a host of other local ingredients, all cooked with a lightness of touch and respect that the product deserves. RED RUM

Could there be anything better than fish so fresh that it still smells of the sea? Yes, as a matter of fact there is – to enjoy that fish on the beach, with nothing but the lick of flames to cook it and the only soundtrack being the waves lapping the shore.Lowly lit in the evening and with a really natural feel, this pavillion-esque restaurant is tastefully decorated to highlight the wider environment of sea and sand, as well as allowing the focus to fall on the amazing food. Go in the day for laidback dining and stunning views of the surrounding nature, or at night for a more intimate affair. Or you could do both! The menu is dependent on the local fishermen’s catches of the day – emphasizing just how fresh and delicious everything is. Local seafood that’s grilled to perfection and served beachside is worth it any time of day.

MANGO BAY

Perhaps the most romantic dining spot we’ve ever been to. The outdoor wooden deck overlooking the sea is the ideal place to watch the sunset while imbibing on good food and drink with your lover.The location and atmosphere of On The Rocks is unrivaled on the island and the food is good too.  There’s a specials board largely adorned with sea creatures, and the waiters will steer you towards the most popular dishes of a similar bent from the longer menu.  There are a number of delicious sounding Thai dishes on the menu, which makes sense as the restaurant overlooks the Thai Gulf.

THE CRAB HOUSE

Shellfish this fresh should never be overwhelmed with frippery. Crab House realises this and does everything in its power to celebrate the lure of sweet, moreish crab. For us, that is everything one can ask for from a restaurant celebrating one, beautiful ingredient.

ITACA

Catalan chic and hospitality is at the heart of Itaca. Strut into a candlelit front garden, smooth grooves soundtracking your entrance, and you’re immediately welcomed with a warm, gracious greeting. Tapas are the focus and we were flown straight to the bouqerias of Barcelona with our first bite of pan con tomate and tortilla. Everything was clean and fresh, yet hearty, and super authentic. To say we were transported straight to Spain would do a disservice to the wonder of the island of Phu Quoc, but Itaca manages to stay both true to the traditions of Spain and celebrate flourishes of southern Vietnamese décor and ingredients. What you’ll certainly feel on arrival, wherever you’re from, is very much at home.

PARADISO RESTAURANT

Located on Sao Beach,  one of the most beautiful and remote beaches on Phu Quoc, Paradiso Restaurant is a spacious affair with a large seafront patio, seconds from the sea. Fish is fresh, brought in from day boats visible from the restaurant, and cooked on the grill to order. With sweet service and ice cold beers, the paradise in the name is certainly done justice.

4 IDEAL TIPS ON HOW TO MAKE THE MOST OUT OF YOUR AUTUMN GARDEN

The highlights of the autumn garden are some of the most heart warming and surprising.  Maybe it’s the rich fall colours that seem to glow, even on dull days.  Maybe it’s that lush burst of growth of the grass, encouraged by morning dew and more frequent rainfall. The gardening year is far from closing, there’s plenty to do to make the most of the season and prepare for the future.

There is a treasure trove of seasonal plant material on sale in garden centres and nurseries. Even if it’s still alive, get rid of summer bedding from those patio containers and pots. There are lots of wonderful autumn and winter container plants that will really brighten up the patio and doorstep: violas, pansies, heathers, heucheras, cyclamen and a host of foliage subjects. Many of these will stay looking good through winter.

Flowers

There are also all those lovely spring flowering bulbs to plant in preparation for another season. Plant any small bulbs such as snowdrops, iris and fritillarias as soon as possible. They deteriorate quickly if left out of the ground for long. Hold off planting tulips until late autumn. If planted to early they can suffer from frost damage or the disease ‘tulip fire’. Daffodils and narcissi can be planted at any time.

Clean up!

Leaves are falling, so keep gathering them regularly and do not leave them lying on the grass. It’s best to mow them up with the mower on a high setting if possible.  This chops the large ones coarsely and adds a few green grass cuttings that help the composting process. It is certainly much less backbreaking than raking; quicker too.

Plant things

Remember that autumn is the best time to plant new trees and shrubs, also to move anything in your garden that needs relocating.  Some shrubs will give instant impact if planted now, they can also benefit wild birds that visit your garden. Cotoneasters are a great choice. Tiny white flowers in spring that attract bees and other pollinators, scarlet berries in autumn and winter that the birds really enjoy. If you are thinking of a planting a tree, think beyond spring blossom. Sorbus and malus both have colourful fruits that provide winter food for birds if you can tempt them to something organic away from the bird feeder.

Be trendy

If you choose just one shrub to plant it has to be a hydrangea: these have gone from being old fashioned to super-trendy in the past couple of years. They are at their best in autumn when their brighter colours fade to something far more sophisticated and beautiful, before they turn parchment in winter. For flower arrangers, this is the time to cut them and dry them to preserve their faded beauty.

Whatever you are planting ground preparation and careful planting gives the best results. So fork over the ground and mix in plenty of garden compost or shrub and tree planting compost. Dig a hole that’s plenty deep and wide enough and plant firmly. Always stake and tie any new trees securely.

HEDONE BAKERY, Bermondsey

An obsessive, research led approach to ingredients and method by chef Mikael Jonsson has resulted in a bread held in the highest esteem across London and beyond. It’s a belter, with a deep and complex crust and holes in the crumb showing off a perfect prove. This loaf is so good that numerous other top London restaurants have laid down their arms, admitted defeat and started buying in their bread from Hedone. If that’s not a seal of approval, we don’t know what is. Find loaves being slung at Spa Terminus, Bermondsey, and in several bakeries and cafes across the capital.

NOBLE ROT, Clerkenwell

Noble Rot does some damn fantastic bread. Go to this winebar for a glass early evening and order the bread from the bar menu. A trio of cracking offerings make the perfect accompaniment to some Ortiz anchovies or a bowl of olives. The sourdough is fantastic, but don’t overlook their rosemary foccacia or rye – both equally stunning.

MAMMADOUGH, Brixton

Mamma Dough is a South London pizza restaurant whose base uses an amazing, standout sourdough. It’s so good it muscled in on the name of the place. We’d definitely recommend a trip just for their starters – you can enjoy a plate of Sardinian charcuterie with some of their superb sourdough. Follow this with a pizza using that sourdough as a base and that’s a one-two punch of deliciousness.

THE DAIRY, Clapham

Blimey. We’ve got this far and not mentioned butter, sourdough’s best friend. The Dairy’s sourdough, presented in a small, brown paper bag – locking in all the warmth and fantastic aroma of the bread – is served with butter thoughtfully flavoured. At our most recent visit, this flavouring was chicken skin – a wonderful, salty foil to the bread.

5 IDEAL WAYS TO PROTECT YOUR LIVING SPACE DURING RENOVATIONS

Living in a home while you are undergoing major renovations is never much fun. Some projects can take months to complete and in the meantime, your home is upside down and back to front. You will have to deal with endless contractors traipsing in and out of your home, dirt, dust, and debris. Of course, the easiest thing would be to move out and wait until the job is done before you take up residence again, but if you have a beady eye on your budget, this won’t be an option.

Unless the property is being rebuilt from the ground up, or the plumbing and power are disconnected, there is no reason why you can’t continue living at home with major work going on. So long as you have at least one room to live, eat, and sleep in, you can cope.

The biggest problem will be excessive noise and dirt. For a house-proud individual, this is never easy to live with, but there are ways and means to protect your living space from the chaos of a major renovation project.

Mark Your Space

Be very clear from the beginning about which areas of the house are off-limits to contractors and workmen. Most contractors are respectful of their client’s homes, but there will always be some who think it’s OK to wander through your living room in search of a kettle. Stick a sign on the door that clearly says: “Off Limits” to avoid confusion.

Screen the Entrance

Keeping doors closed will help to eliminate the worst of the mess, but it may not be enough if there is a ton of dust. Use dust containment screens and plastic sheeting to prevent dust traveling into your living space. Temporary poles, dust sheeting, and double-sided tape will help keep your living, sleeping, and eating areas clean.

Protect Flooring

Put plastic sheeting down in areas where contractors walk through. Most contractors will do this as a matter of course, but it is worth asking in advance of the start date to ensure your carpets and wooden floors are protected. It may be worth lifting carpets and storing them out of the way if you have a particularly expensive carpet. Expensive carpets can be re-laid relatively cheaply, but they are a lot dearer to replace.

Have a Decontamination Zone

Create a decontamination zone where you have a space to remove dirty shoes, outerwear, and hats before you enter the main living quarters. This is especially important if your renovation project is taking place in bad weather. The last thing you want is to have to clean mud that’s been tracked everywhere.

Have Separate Contractor Areas

Provide a kitchen area for workmen to make hot drinks and eat their food and if you don’t want them using your family bathroom, rent a portable restroom for the duration of the project.

It’s not easy living through a major renovation project, but it can be done if you follow the above tips. The alternative is to rent a mobile home and park it on-site so you have somewhere separate to go, away from the mess.

RESTAURANT REVIEW: TORO TORO, DUBAI- THE IDEAL PLACE FOR PAN-LATIN CUISINE IN THE UAE

Toro Toro is Dubai’s finest Pan-Latin restaurant in the heart of the Marina, specialising in “churrasco” (hot grilled meat) served by specially trained passadors tableside, we went on a recent trip to Dubai, read on to find out what we thought of it. 

Idea

The Pan Latin concept is an all encompassing proposition, serving up a variety of dishes which take inspiration from Brazil, Peru, Argentina and Colombia, in small plates designed to be shared and enjoyed among groups of friends. Toro Toro is the first of its kind in Dubai and due to this, naturally an emphasis is on meat due to the specialised churrasco grill – in other words this is a restaurant for the carnivores out there.

Location

Located in the famed Grosvenor House, in the heart of Dubai this restaurant compliments the hotels luxurious reputation and is perfect for a late night date or a long brunch. Perched right on the marina’s edge, Toro Toro certainly enjoys magnificent setting. With its modern architecture and pristine clean sidewalk, the restaurant exterior is pretty ostentatious, giving the appearance of an entrance to a nightclub rather than that of an award winning restaurant.

Style and Character

As soon as you arrive you are reminded that this place is all about the meat. Even the name, Toro Toro, means bull in Spanish. A giant golden bull greets you upon entry. A large dark wood desk stands dauntingly in the centre of the entrance, however the friendly smiles of restaurant staff behind the counters soon make you feel at ease.

Wrought iron encasing the stairs, flaming red floor to ceiling fireplaces and an luminous onyx wall gives a lava like appearance. Bull horns adorn the walls. This place certainly doesn’t do things by halves. Even the high-backed, animal-clad chairs create depth – the entire ambience is immersive, that’s for sure.

Atmosphere

A DJ situated on the top floor playing modern South American inspired beats, providing you with the perfect excuse to sit at the cahaca bar and whittle away the hours catching up with and sipping cocktails.

Master passadores (in simple terms, ‘meat waiters’) flock to customers, ready to serve hungry carnivores premium cuts of chicken, lamb and beef by carving it off the bone. Smartly dressed and each with their own charm, they are a reason just in themselves to visit the famed Toro Toro. Our passadore never missed a beat, our water glasses were always full, food served promptly and all our questions answered gracefully and in great depth. They certainly give the impression they are knowledgeable to a standard only achieved when true passion exists.

Food

“Across Latin America, food is more than a meal. It is an event. A celebration that’s shared, savoured and enjoyed with the finest spirits.” This phrase is emblazoned across the food menu and with this in mind, and with the pre-dinner cocktails starting to take affect, we found it hard to not salivate at every item listed. The menu items are categorised as ‘From the Sea’, ‘From the Land’ and ‘From the Garden.’ Whilst we deliberated over these categories, tasty warm cheese buns with a side of tomato salsa and chimichurri were served as appetisers.

The menu is created by Richard Sandoval, a famed Latin American Chef national with over 15 years’ experience across the globe. He has built a reputation for combining authentic Latin ingredients with international flavours and inventive techniques, to create new and unexpected concepts.  Think Brazilian and Argentine churrasquerias full of servers delivering sizzling skewers of perfectly grilled meats, alongside dozens of small hot and cold shareable plates, Toro Toro is sure to have your insides dancing with delicious food.  

The idea is to share food—the only way to savour Sandoval’s eclectic selection of dishes, which includes everything from ceviche to guacamole to chorizo empanadas. The Yuca fries, are particularly interesting, made from a starchy vegetable otherwise known as cassava, and are perfectly plump and crispy, served with olive oil, lemon and garlic; a nice combination of savoury and sharp elements.

However the real highlight is the churrasco grill where premium cuts of meat prepared by highly skilled passadors are presented to diners tableside, before the meat is perfectly sliced onto a sizzling hot plate, ready to enjoy. 

Drink

Immersing ourselves is exactly what we intended to do, so having perched ourselves at one end of the infinite Cachaça Bar we proceeded to pore over the extensive cocktail list, full of Latin American concoctions. The cocktail list is split into different categories, each represented by a brightly coloured bull. From Jasmine infused spirits to rosemary, the ingredients are so vast you can even request a cocktail off menu and they make it for you. The restaurant also has an elaborate open wine cellar featuring over 100 South American labels. This wine cellar spans the two floors and is encased by floor to ceiling wrought iron bars. It is a magnificent sight which holds plenty of UAE treasures, including wines exclusive to Toro Toro. 

Must try

The beef here is particularly fine, sourced from Argentina and cooked over flames to a perfect medium-rare. When sitting next to a whole host of sides and dipping sauces, you just can’t go wrong.

Algarve, Portugal

Standing tall despite recent tragic events, this enchanting city has so much history that it is a great holiday destination for the family. There is amazing architecture from the talented Antonio Gaudi with buildings that have curved chimneys and other curious features.

You also have the huge Parc de Ciutadella that is great for picnics. It has a central zoo for the kids and intriguing structures and artefacts for the adults. There is also the delicious traditional food that you can sample at one of Barcelona’s many tapas bars. What makes Barcelona an ideal holiday destination is that you have this amazing city right alongside beautiful urban beaches. It really does tick all boxes.

Disneyland Paris, France

If you did manage to find a hidden treasure in your attic, then you might consider Disneyland Paris. Although it tends to be more expensive than other holidays, the fun, excitement and lifelong memories your family can share will more than make up for it.

Not only is there the main Disneyland Resort with its Space Mountain and Pirates of the Caribbean rides, but there is now also the Walt Disney Studios Park. The abundance of themed restaurants add that little extra sprinkling of magic to your meals.

Europa Park, Germany

If you want something that is exciting and fun, then the Europa Park is the place to go. It is one of Europe’s biggest theme parks, and like Disneyland, has lots of rides and roller coasters to enjoy. There is the Silver Star roller coaster that reaches a height of 73 meters and pulls 4g, or you can try the Blue Fire Megacoaster which goes from 0 to 100km/h in 2.5 seconds. A great choice for kids and adults alike.

THE IDEAL RECIPE FOR CHOCOLATE CHIP COOKIES BY PAUL HOLLYWOOD

Paul Hollywood shares his favourite chocolate chip recipe with IDEAL

The first ever chocolate chip cookie was invented in America in 1930 at the Toll House Inn restaurant in Massachusetts. Now a firm favourite across the world, the chocolate chip cookie is the most popular type of home-baked cookie in the States. Big, soft and chewy, they are a treat for kids – especially big kids like me! This recipe will give you delicious cookies that are much better than any shop-bought version. The secret to the flavour is to use the best dark chocolate chips you can find.

Makes 16 cookies

PREP: 15 minutes

CHILL: 2 hours

BAKE: 12–15 minutes

INGREDIENTS

150g softened unsalted butter

150g caster sugar

100g light soft brown sugar

1 large egg

250g plain flour

1 teaspoon baking powder

½ teaspoon salt

45g cocoa powder

150g dark chocolate chips

METHOD

1. In a large bowl, cream the butter and both sugars together with an electric whisk until smooth and fluffy. Add the egg and mix well.

2. In a separate bowl, mix the flour with the baking powder, salt and cocoa powder. Add to the butter mixture and mix well to form a stiff dough. At first it will look like there is too much flour, but whisk slowly and it will form a stiff dough. Add the chocolate chips.

3. Tip the dough on to a large piece of clingfilm or greaseproof paper. Roll the dough into a cylinder shape 27cm long and 6cm wide. Place in the fridge to firm up for at least 2 hours.

4. Line two baking trays with parchment paper. Preheat your oven to 160°C/Gas 3.

5. Unwrap the dough, cut into 16 equal slices and place on the prepared trays, leaving room to spread. Bake for 12 to 15 minutes. The cookies should have risen and spread out. They will still be soft when you remove them from the oven, so leave to firm on the tray for a few minutes before cooling completely on a wire rack.
