5 IDEAL THINGS TO KNOW BEFORE YOUR HOLIDAY TO MEXICO

With its gorgeous beaches, glorious weather and vibrant, varied culture, more and more people are discovering Mexico as a tropical holiday destination. Whether it’s the popular party resorts of Cabo San Lucas and Cancun, the rich-in-history megacities of Mexico City and Guadalajara, or the colourful, confident Merida and Oaxaca, there really is something for everyone here. Before you book your trip to the Land of Enchantment, there are a few key considerations to bear in mind; our 5 IDEAL things to know before your holiday to Mexico. 

DEPARTURE TAX

The Mexico departure tax is a fee charged to every non-resident when they depart the country. Depending on who you’ve booked your holiday with, you may find that this tax is covered in the price of your trip, but always check before you travel and be sure to have enough cash with you when at the airport to return home, as cards and traveller’s cheques are not accepted.

The tax costs 1150 Mexican pesos (around £50) per person. When you arrive in Mexico, you’ll be given a Tourist Form which you’ll need to fill out. On your return leg, the ‘exit’ section of your Tourist Form is required by immigration, as well as your departure tax, so keep this form safe during your trip.

30 UNESCO WORLD HERITAGE SITES

You’ll never be bored in Mexico, that’s for sure; there is simply so much to see and endless history to uncover. The Pre-Hispanic City of Chichen Itza is one of the most visited and famous sites the world and is known for being one of the largest ancient Mayan cities. Other notable destinations on the World Heritage list include the historic centre of Mexico City, the ancient Mesoamerican city of Teotihuacan, the biosphere reserve of Sian Ka’an, home to some of Mexico’s rarest species, and the rock paintings of Sierra de San Francisco, near Baja California Sur. And that’s to name but a few.

Cancun is a where many choose to start their exploration of the country’s cultural and historical side. A major tourist city, it is also home to several ancient Mayan temples, some excellent museums and galleries which give you an insight into Mexican history and heritage. Apart from that, the city offers luxurious accommodation options that blend in with the unique aura of the city, including many all inclusive resort in Cancun options that make planning your stay effortless.

A DIVERSE FOOD CULTURE

Mexican food is so much more than your high street Wahaca. It’s a rich and diverse affair, with regional specialties and the influence of history, culture and migration writ large. Trying local dishes is a huge part of embracing Mexican culture and it’s essential you get off the beaten track and stuck in if you’re to truly scratch the service of this amazing country’s cuisine.

Tuck into tortas (a Mexican sandwich stuffed with beef or pork, beans, avocado, and lettuce), mole poblano (chicken in a rich sauce made with chocolate and chilli), and slow-roasted pork wrapped in banana leaves. If you’ve got a sweet tooth, try churros – fried dough fingers dusted in cinnamon and sugar, which you dip in chocolate sauce. Heaven.

HEALTHY HOLIDAYING

Do not drink tap water in Mexico. Even locals avoid ice in drinks at restaurants which cater less to the tourist crowd, so tread carefully. Refrain from using tap water to brush your teeth (or at the least, are extra cautious about swallowing), too. Bottled, purified water is readily available and very cheap, so keep some to hand at all times when travelling around. Your hotel will certainly provide the clean stuff.

It’s also a good idea to consult your doctor at least two months before your holiday to check that your vaccinations are up to date. Also pack a first aid kit with some antiseptic cream, bandages, plasters and anti-allergy medication, as well as mosquito repellent and plenty of sun cream.

If you like to play it safe, take out comprehensive medical cover for your trip, and take plenty of cash with you as some hospitals may not be able to deal directly with insurers, meaning that you’ll need to pay for your treatment upfront while in Mexico and then seek a refund from your insurance company upon returning home.

CURRENCY SMARTS

As with any unfamiliar holiday destination, it’s a wise move to get to grips with the currency to avoid getting ripped off (or missing out on a great bargain, equally). There are 100 Mexican centavos in each peso and the symbol for Mexican pesos is the same as the dollar sign, but note that there will usually be the letters ‘MN’ after it, so you do not confuse pesos with US dollars. Tipping is expected in Mexico; think about giving 10-20% as a tip for services like meals in restaurants and spa services, as well as to tour guides and bar staff.

You’ll always need to request the bill – in Mexico, it’s considered rude for serving staff to hand you the bill before you have asked for it; that’s ‘la cuenta por favor’ to the monolingual. If you shop enthusiastically during your holiday, you may be eligible for a tourist tax refund. You must spend at least 1200 pesos on Mexican goods (excluding food and hotel services), and request VAT receipts which you can then claim back when you are at the airport at a ‘Moneyback’ kiosk.

5 IDEAL CITIES IN THE UK TO LIVE IN FOR THE PROGRESSIVE TYPE

We’ve all heard the term thrown about enough by now. Some may take it as a compliment. Many, weirdly, throw it about as an insult. To avoid any confusion off the bat, we’ll sum it up anyway; The Oxford English Dictionary defines the word ‘woke’ as being aware or well-informed in a political or cultural sense. 

A new study from Bankrate, reported by Global Citizen, assessed 50 cities across the UK on their ‘wokeness’ in order to find out where the most progressive areas in which to live and work are. This was defined not only by recognition of social and environmental issues, but also by how the city handles them and enables positive change. With this research in mind, here are 5 IDEAL cities in the UK to live in for the progressive type.

OXFORD

The study evaluated seven categories of data: Google search trends, gender pay gap, recycling rates, voter turnout, vegan and vegetarian availability, ultra-low emission vehicles and council diversity. Oxford, perhaps surprisingly, comes up on top. This is in part due to the city having the second youngest population in the country; giving a little hope for the future, youth tends to correlate with a greater social conscience.

BRIGHTON & HOVE

Home to Britain’s only Green MP, as the Guardian so rightly puts “many see Brighton as a kind of British equivalent of San Francisco: a bohemian city with a massive gay population and a penchant for alternative free-thinking.”

Embracing a predominantly herbivorous diet also signifies the city’s wokeness, given that there is clear evidence explaining why meat production and consumption leaves a far higher carbon footprint than a plant-based lifestyle. Brighton has a large vegan population, as well as being a famously LGBTQ+ place to be, and as such, the vibe is woke and caring. This means there’s always a sense of plenty going on in the city culturally. We’ve written more about that over here; check it out.

BRISTOL

Widely regarded as one of the best places to live in the UK, Bristol is a unique place with a spirit that’s unlike any other. More importantly, Bristol is, simply, a very cool place to live. For a start, it’s the hometown of street artist Banksy. It has bars on boats and art galleries in disused toilets. Since the early 1990’s it’s been renowned for its buzzy nightlife and underground music scene, which still exists, and is flourishing today. More recently, it’s become a beacon for aspiring foodies and restauranteurs alike. A creative, green, young and vibrant city, make no mistake.

BATH

Not to be outdone by Brighton’s veganism, Bath is often cited as being the vegan capital of the UK, with some excellent ‘plant based’ cafes operating in the city. Some of our favourites include the perennially popular Green Rocket Cafe on 1 Pierrepont Street and the new kid in town Roots and Shoots, who have set the wokeness bar higher still by operating completely plastic free. Lovely stuff. The rolling hills surrounding the city centre and vast green spaces within it (the Royal Victoria Park is a must visit) only add to this sense of the environmentally friendly and hospitable.

CAMBRIDGE 

The top ten wokest cities all have a strong student presence, with Oxford, Brighton, London (with a score of 22.13), Cambridge (21.87), Bristol (21.50), Leeds (21.29), Cardiff (21.28) and Exeter (21.21) all being home to major UK universities. This shows a clear correlation between progressiveness and students.

But Cambridge’s relationship between the socially conscious and its student population goes a little further; the university has recently announced extra places for disadvantaged students who excelled in their A Level results. What’s more, rapper Stormzy’s scholarship scheme for black students is based here.

5 IDEAL STEPS TO HELP A LOVED ONE QUIT SMOKING

Smoking kills. But in an era when the starkest of warnings seems to elicit the most apathetic of shrugs, let’s also say this; smoking smells. It costs, a lot. Smoking harms other and the planet. The list goes on. But you’ve probably tried all this right? 

Indeed, when someone close to you is trying to give up the cigs, simply stating the negatives is rarely the most effective method of helping them knock the habit on the head. Instead, a holistic approach, with guidance and advice, usually elicits more positive results. With that in mind, here are 5 IDEAL steps to help a loved one quit smoking.

OFFER DISTRACTION

When the craving hits, smokers will find a way to extricate themselves from the room to sneak off for a toke. Nicotine is powerful stuff, make no mistake, and the pull is strong. So, offer distractions from the craving and excuses to stay present. We don’t mean an old school ‘hey look over there!’ whilst you snatch the cigarettes from their grasp. More, keep the conversation flowing, the entertainment on and your support and presence a constant.

CONSIDER ALTERNATIVES

It might seem like the easy way out or only a partial approach to success, but by finding short term nicotine replacements, the first step on the road to giving up is tentatively placed. The rest will follow, in time. Nicotine withdrawal can be a real downer, making you restless and irritable. Opting for an intake of nicotine without the other harmful toxic chemicals can make kicking the cigs, step-by-step, manageable. 

One such way that many have chosen to leave the habit behind is by replacing cigarettes with an electronic alternative, or vape. Studies have suggested that the long-term effects of vaping are far less harmful than smoking cigarettes, as even though nicotine is still present, many of the auxiliary chemicals – such as carbon monoxide – are not.

Other nicotine replacements are effective, and more medically approved too. These include gum, nasal spray, lozenges or an inhaler.

It’s a sad truth that so many of us succumb to cigarettes after we’ve had a drink. Our guard is down, our sense of responsibility lifted,  and the act seems almost habitual with a pint in the other hand. A few precautionary measures on a night out can prevent this. 

No matter the weather; come rain, snow or blizzard, real smokers will risk the elements to get their nicotine fix, right? However, having to leave the warmth of a pub and stand in the icy cold isn’t really worth it, is it? So leave your coat in the cloakroom or behind the bar so it’s more difficult to simply slip outside. There’s absolutely no stigma in seeking help – that’s what it’s there for, after all – so visit your GP, find your nearest NHS Stop Smoking service on their devoted Smokefree website, or call the Smokefree National Helpline on 0300 123 1044 to speak to a trained adviser.

 

4 IDEAL TIPS FOR DEALING WITH PESTS IN LONDON

We hate to reel out that oft quoted statistic, but we’re going to do it anyway; you’re never more than six feet away from a rat in London. This should reassure, rather than shock, you. Because although there’s certainly still stigma attached to a house with visiting rodents or a cockroach infestation, it is actually surprisingly common, and it some cases, unavoidable. Should this happen to you (you’re here, we’re assuming it has), then there are a few key considerations before you go nuclear. These are those; our 4 IDEAL tips for dealing with pests.

DEFINE THE DIFFERENCE BETWEEN PEST AND NUISANCE

Defining a ‘pest’ can be tricky. We all find Boris Johnsons’ presence intensely irritating. That said, we’re not within our rights to eliminate him. The same goes for certain animals and insects you might consider a pest; sometimes a nuisance is a more apt description, and your approach to dealing with them depends on this definition somewhat. For instance, though a single spider may be stalking your shower, you’re going to waste everyone’s time calling in the pest experts to take it out.

A fairer definition includes cockroaches, bed bugs, pigeons, rats and even bats. When seeking commercial pest control services, first discuss if your problem actually needs exterminating. There are companies who specialise in a particular pest, so investigate this too.

Good news; your landlord or the council may well be responsible for dealing with your pest problem. If you’re renting, your landlord should sort out pest control if repairs are needed to stop the pests getting in or an infestation makes your home difficult or unsafe to live in. You may incur responsibility if your actions and routines encourage pests to visit, but more of that later.

You should contact the council first, prior to professional services, should your pests be rats or mice, pigeons, a swarm of wasps, fleas and many others. A more definitive list exists here. It’s unlikely your council will help you deal with foxes, rabbits and squirrels, and their assistance may take some time. In which case…

HIRE A COMPANY WITH SEVERAL SERVICES INCLUDED

Sometimes it’s necessary to call in the professionals, and the best ones often offer several services; the extermination itself, aftercare, and advice on future prevention should come as standard. These extra services will provide you a better long-term solution and make sure that the pest does not come back. So, it’s prudent to hire a company that also includes wildlife management, fumigations and rodent extermination and prevention since you never know exactly what is happening underground or in the nooks and crannies of your home.

PREVENTION, NOT CURE

Prevention is better than cure; a maxim that has never been truer than when discussing pest control. So, if you don’t want a rat sharing your kitchen or an infestation of cockroaches, it’s best practice to live cleanly and consciously from the get go. HIT THE HARD ROCK STADIUM

The city’s oldest sports franchise (that’s what they call ‘teams’ across the pond) are NFL side Miami Dolphins, and they strut their stuff in the ultra-modern, ultra-massive Hard Rock Stadium. If you know your blitz from your bomb, then catching a game here is a must; a huge spectacle which only the Americans could pull off. The Fins are one of the biggest draws in the division. In fact, they’re the only team to win the Super Bowl undefeated. Speaking of that illustrious event, the Hard Rock Stadium is set to host it next year, in February 2020. With home advantage surely making the Dolphins one of the NFL playoff favourites, Miami is set to be more sports mad than ever early next year. Time to plan a trip?

PETROLHEADS REJOICE

If you’d prefer to have your hands on the wheel rather than playing with balls, then Miami is also a petrolhead’s paradise. The final race of the NASCAR season takes place here, at the Homestead Miami Speedway, a 65000 capacity racing facility which hosts dozens of massive events throughout the year. If you’re after something more hands on still, driving in the city can get pretty hairy with Miami’s drivers consistently voted the worst in the country. Good luck!

COURTSIDE HEAT

Surely Miami’s most famous sporting export are basketball team Miami Heat. While actually catching a game courtside at the American Airlines Arena is pretty, prohibitively pricey, some tickets in the upper rows go for as little as $15. Though you won’t see as much, the sheer spectacle of such an occasion is worth it. There’s also the secondary sport within the stadium of celeb’ spotting, particularly prevalent here as the Heat attract huge names such as Justin Bieber, Rick Ross and David Beckham to the Arena. GO FISHING

Not to be outdone or outswum are the city’s other piscine team the Miami Marlins, the city’s chief baseball side, who ply their trade at Marlins Park in the buzzing Little Havana district. With the soil harmed, plants can’t grow to soak up carbon from the atmosphere, so the problem is in effect two-fold. 

Experts state that 75 billion tonnes of fertile soil is lost every year due to degradation, and poor or outdated farming techniques, such as overusing pesticides, are partly to blame. This is pushing a rewilding movement, with the belief that the best way to protect soil would be to allow forests to return. This of course, would impact the amount of land farmers have access to to grow their crops and graze their cattle. There are many within the industry who say that they could continue to farm and protect the soil by changing their methods. 

One change in farming methods that can help protect soil is by ditching ploughs and instead relying on natural methods such as nutrients from compost and crop cover to help rejuvenate the soil. The Guardian recently reported how farmers are fighting to save their soil after reports showed the UK is only decades away from having critically low soil fertility — and the stark warning that we simply cannot survive without good soil. It’s essential, then, to vote with your wallet on this one, buying from those producers committed to protecting the ground.

STOP BUYING FROM MEGAFARMS 

Big companies are taking over agriculture. And that spells bad news for farmers, producers, the product itself and consumers. The Conversation outlined that England 15 years ago was home to nine times as many small farms as in 2018; a huge reduction, make no mistake. The rather-ominous sounding ‘megafarms’ have taken over the British countryside, and considering the damage smaller farmers are trying to help tackle, it’s certainly no good thing. 

Megafarms are touted as being particularly problematic for the environment, with polluted waterways and damaged rivers linked to these supersized industrial farms. With many farmers predicted to leave the industry as paid-by-area government subsidiaries cease, as well as the continued struggles with simply turning a profit from the food they are growing, wealthy business owners are snapping up the land left behind. Did you know, for example, that inventor James Dyson is one of the most prominent landowners in farming? In short, he shouldn’t be.

BUY LOCALLY & INDEPENDENTLY 

Buy independently, from a local butcher if you can, so your meat, fruit and vegetable’s provenance is easier to trace. These guys care deeply about their product, not just the coin it’ll make. You’ll be supporting a local business too, not some multi-conglomerate who couldn’t care less about your stomach’s welfare, let alone an animals’; a no brainer, really. Avoiding supermarkets also helps you avoid vacuum packed, plastic wrapped meat (meat sweats? no thankyou) and fresh produce which has travelled a long way and has been damaged – and has damaged the environment – in the process.

STOP BREXIT 

There is seemingly no area that Brexit won’t influence, and the decline of farming in the UK is no exception. Despite the flummoxing exit from the European Union stretching on and on, it’s already affecting agricultural processes. Without the support of workers from the EU, farms have had no choice but to let thousands of pounds worth of produce rotting in the fields. This, on top of the already difficult nature of making a living from crops and livestock, is certainly a problem the industry could have done without. 

Beyond this, the changes Brexit could have on the export of British meat could be catastrophic. For example, Welsh lamb exports 40 per cent of its lamb outside of the UK, with 90 per cent of that yield heading to the EU. Though you would be hard pressed to find a sector that isn’t struggling with issues such as the environment or politics, finding one as deeply throttled by it as agriculture could indeed be difficult. Do your bit, buy local, boycott the bully boys and support those with a regenerative approach to agriculture.

Cosy Owl, leading providers of candle making supplies, conducted a study of surveys from previous years in order to investigate the change in value of wedding gifts in the UK over the past 5 years. The main finding is this; people are spending significantly less than they were 5 years ago. Perhaps some inspiration is needed, some clarity over what’s good and what’s not in this thriftier age. AN ACCEPTABLE AVERAGE SPEND 

The aforementioned study found that overall, wedding guests in the UK are prepared to spend £44.97 on a gift in 2019. This represents a deflation of 10% compared to in 2014. True to regional stereotypes, when broken down across the UK, wedding guests in Yorkshire and the Humber seem to be spending a significant amount less than 5 years ago, at 39%. This was closely followed by those in Northern Ireland, who are spending 37% less on wedding gifts. Comparably, Londoners are spending almost the same as the heady days of five years ago, just 5% less, in fact. Simply put; it’s important to be aware of what others spend so you don’t wildly overspend unknowingly. 

GREAT EXPECTATIONS?

Or perhaps not. Wedded couples don’t actually expect a huge spend on their gifts; £50.70 on average, which is 11% more than guests’ plans on spending. Not a huge disparity, then. Again, by keeping in the general ballpark of what’s expected of you and what your peers are spending, you’ll avoid that overspend as well as looking stingy.

CONSIDER WHAT YOU’RE SPENDING TO ATTEND

There comes a time in adulthood when weddings start to come thick and fast. Friends and family of a similar generation to you seem to be shacking up and settling down with increasing frequency, and it starts to feel like barely a month passes without another wedding date on the calendar. 8 IDEAL BBQ RECIPES TO TRY THIS SUMMER

According to recent weather reports, the UK is set to revel in a three-week heat wave, carrying on into September. In the UK, we never really know when the next period of glorious weather is going to appear. But when the sun comes out, in true Great British fashion, you’ll see people in the garden, in shorts and little else, dusting off the barbecue. To help inspire you to get your BBQ fired up we’ve teamed up with Flogas Gaslight – a BBQ gas bottle supplier – to serve you up these; our 8 IDEAL BBQ recipes to try this summer.

SOY SAUCE & GINGER BABY BACK RIBS

Enjoy this Asian fusion recipe for an intense flavour hit!

  • 4 racks of baby back ribs
  • 6 cloves of garlic
  • 1 piece of fresh ginger peeled and chopped coarsely
  • 1 tablespoon sugar
  • 1 tablespoon sea salt
  • 2 tablespoons freshly ground black pepper
  • 2 tablespoons honey
  • 1 tablespoon soy sauce
  • 1 tablespoon fish sauce

FOR THE SAUCE

  • 4 teaspoons sea salt
  • 2 teaspoons white pepper
  • 4 limes halved

METHOD Prepare the ribs, removing the membrane if necessary. If you are using a large rack of ribs, cut in half. Place flat in a Pyrex baking dish. Use a pestle and mortar, or food processor, to ground down the garlic, ginger, sugar, salt and black pepper. Slowly add the honey, soy and fish sauce to the mixture, then spread on both sides of the ribs. Cover and place in the fridge, allowing them to marinate for two to four hours. Prepare the dipping sauce by mixing 4 teaspoons of salt, and 4 teaspoons of white pepper with the juice of the limes. Ensure the grill grate is clean and heat up the BBQ, then place the ribs bone side down for 8-12 minutes per side — cook until golden brown (this may require a little longer if you are using large ribs). When cooked through, the meat will have shrunk back from the ends of the bones by around ¼ inch.

LEMON AND LIME CHICKEN BREAST

A true taste of summer, this. Perfect with a batch of sweet potato, we think.

  • 6 boneless chicken breasts
  • ½ cup brown sugar
  • ¼ cup cider vinegar
  • 3 tablespoons each lemon juice and lime juice
  • 3 tablespoons Dijon mustard
  • 3/4 teaspoon garlic powder
  • 1/4 teaspoon pepper
  • 1/2 teaspoon salt

METHOD Place the chicken into a resealable plastic bag and combine the ingredients. Allow the mixture to marinate overnight. If there’s any marinade left over, use it for a salad dressing. On a preheated BBQ, grill the chicken at a medium heat for 15-18 minutes, turning once and ensuring that the juices run clear before serving.

A healthy(ish) BBQ meal choice, these skewers can be seasoned to your taste preferences and served up with a fresh side salad!

  • 1 ½ lbs of jumbo shrimps (with heads removed)
  • 3 tablespoons fresh lime juice and 1 large whole lime
  • 3 teaspoons sea salt
  • 3 teaspoons freshly ground white pepper
  • Metal skewers

METHOD First, rinse the shrimp under cold water, drain and gently pat dry. Place the shrimp into a Pyrex dish and cover with the 3 tablespoons of lime juice, adding a teaspoon each of salt and white pepper, mixing to coat. Cure at room temperature for just 10 minutes. In a separate bowl, mix sea salt and white pepper with the juiced single lime. Heat the BBQ and brush the grate with oil. Place the shrimp onto the grate and grill, turning until the meat is just pink. This should take about 2 minutes on each side. Use tongs to remove from the grill and place onto the skewers. Drizzle the sauce over and enjoy.

BBQ TURKEY BURGERS

A turkey isn’t just for Christmas…

  • 1/4 cup mayonnaise
  • 1 garlic clove, minced
  • 2 tablespoons minced fresh basil (divided)
  • 1/4 cup milk
  • 2 tablespoons finely chopped onion
  • 1 tablespoon dry bread crumbs
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
  • 12 ounces ground turkey
  • 4 hamburger buns, split
  • 4 lettuce leaves
  • 1 large tomato, sliced

METHOD Use a bowl to combine mayonnaise, the garlic clove and a tablespoon of basil. Cover and place into a fridge until serving. Apply non-stick cooking spray to your grate and preheat the grill. In another bowl, mix milk, onion, salt, bread crumbs, salt, pepper and the rest of the basil. Add the turkey and mix well, then mould the mixture into patties, placing onto the grill over an indirect medium heat. Grill for 5 to 6 minutes on each side, serving when the meat is no longer pink. Serve on buns with lettuce, tomato and your garlic and basil mayo.

SESAME STEAKS

Make no mi-steak, this simple and delicious recipe with have guests cooing.

  • 1/2 cup soy sauce
  • 2 tablespoons brown sugar
  • 2 tablespoons vegetable oil
  • 2 tablespoons sesame seeds
  • 2 teaspoons onion powder
  • 2 teaspoons lemon juice
  • 1/4 teaspoon ground ginger
  • 4 T-bone steaks (about 1-inch thick)

METHOD Add the first seven ingredients into a resealable plastic bag and mix well. Place the steaks into the bag and coat with the mixture, seal and allow to marinate for 4 hours. Drain and discard the left-over marinade. On a preheated grate, cook the steaks on a medium heat for 4ish minutes each side, for medium rare, or longer depending on preference.

HALOUMI GYROS AND TZATZIKI

Another veggie option here, the popular Greek cheese is excellent on the barbie. GYROS

  • 200g haloumi cheese
  • 2 pieces pitta bread
  • 1 tomato
  • 2 cups rocket
  • 1 baby brown onion

TZATZIKI

  • 1 cup Greek yoghurt
  • 1 teaspoon minced garlic
  • Lemon juice
  • Lemon zest
  • 2 tablespoons olive oil
  • Pinch of salt/ black pepper
  • 1 cucumber, seedless, peeled and shredded.

METHOD Prepare the tzatziki by combining all of the ingredients in a bowl and mix well until combined. Season to your taste preferences. Cut the tomato in half and slice finely, doing the same with the onion, then place both to one side. Cut the haloumi into centimetre thick slices, placing onto the BBQ at a medium heat. Cook for 2 minutes each side or until browned, then place the pittas onto the grate to warm gently for 30 seconds each side. Assemble the gyros with the haloumi and the tzatziki, adding the onion and tomato to garnish.

BARBECUED FIGS WIITH HONEY AND CINNAMON

BBQ’s are not just for savoury dishes, so why not succumb to your sweet tooth and give this sweet treat a try. It’s great for the health conscious too — with only 112 calories per serving.

  • 8 ripe figs, stems removed
  • 3 tbsp clear honey
  • 15g (½oz) salted butter, diced
  • Ground cinnamon, to sprinkle
  • Pistachio nuts, roughly chopped, to serve
  • Ice cream or cream, to serve (optional – calorie count obviously affected)

METHOD Make a deep cross in each fig using a knife, stopping just before the base. Squeeze the base to make the figs open up (similar to a flower-shape). Place into a heatproof dish or foil tray and drizzle with honey. Add drops of butter and a sprinkle of cinnamon. Place the dish or tray, away from direct heat, onto the barbecue and close the lid. Allow to cook for 8-10 minutes, or until the fruit has softened. After cooling, scatter the nuts and serve.

CITRUS SALMON AND ZEZTY SALSA

Fish and citrus are the ultimate summer combination. Try this one out….

  • 1/2 cup raspberry vinegar
  • 1/4 cup soy sauce
  • 2 tablespoons ground fresh coriander
  • 2 tablespoons minced fresh ginger
  • 1 tablespoon olive oil
  • 1/2 teaspoon hot pepper sauce
  • 1/8 teaspoon pepper
  • 4 salmon fillets (6 ounces each)

SALSA

  • 3/4 cup pink grapefruit segments, cut into bite-size pieces
  • 1/2 cup orange segments, cut into bite-size pieces
  • 1 tablespoon raspberry vinegar
  • 1 tablespoon honey
  • 1 teaspoon ground fresh coriander
  • 1 teaspoon minced fresh ginger root
  • 1/8 teaspoon hot pepper sauce

METHOD Mix the first 7 ingredients together in a resealable plastic bag and refrigerate for 3 hours. In a small bowl, combine all of the salsa ingredients and mix well, then cover and keep cool until serving. Drain the marinade and coat your BBQ grate with non-stick cooking spray.

Preheat and place the salmon skin side down on to the grill, cooking while covered at a medium heat for 15-20 minutes until a flaky texture is achieved.
