One Of London’s Best Mexican Chefs Explains How To Make The Perfect Guacamole 

Who doesn’t love a bowl of chunky homemade guacamole? None of that smooth as silk, pervasively preserved, supermarket stuff, but rather, one that’s just-made, using ripe avocados and, ideally, paired with some freshly fried tortilla chips for the perfect taco night or just a simple, roadside snack. 

There really is nothing better… Pass the Modelo and all that.

But how to make a truly delicious version from the comfort of home? Well, the good news is that it’s not too difficult, and to celebrate September 16th’s National Guacamole Day in collaboration with the World Avocado Organisation, chef Edson Diaz-Fuentes has shared his ultimate guacamole recipe with us.

Edson is the founder of the critically acclaimed restaurant Santo Remedio, one of the best Mexican restaurants in the city and also featuring on our rundown of where to eat in London Bridge and Borough.

Born and raised in Mexico City, Edson has been fascinated by food since childhood, whether he was watching his grandmother cook at home or tucking into a taco at one of the city’s many taquerías (Mexico City boasts over 18,000 of them). 

Edson travelled, cooked and honed his craft in New York, London and Oaxaca City, Mexico, before heading back to the UK capital and setting up Santo Remedio in 2015. The concept began as a food stall and evolved into a critically acclaimed restaurant in London Bridge, with a second location opening recently in Shoreditch. 

How Do You Make The Perfect Guacamole?

“How do you make the perfect guacamole?” is a question Edson Diaz-Fuentes has been asked countless times. According to the Mexican-born chef and founder of the London restaurant Santo Remedio, it’s all about the avocados themselves. 

A good quality, perfectly ripe avocado needs only to be gently combined with a handful of ingredients to make delicious guacamole. 

The Ingredients

Aside from the star ingredient, avocado, the key elements to Edson’s guacamole are onions, lime, tomato, coriander, chilli and salt. 

According to Edson, “In Mexico, guacamole is usually made with white onions, but here I prefer to use red because they are slightly sweeter, similar to white ones we use in Mexico”. 

The lime juice brings a fresh zinginess and tones down the strength of the onions. “In Mexico, we use the word desflemar to describe the action of adding citrus juices to vegetables or chillies to reduce their acidity or spice level”. 

The lime juice also slows the oxidation of the avocado pulp, stopping it from turning brown. Of course, if you’re going for a more simple guacamole rendition (some believe it should be just mashed avocado), then you can keep your guac from going brown using the stone of the fruit. As Edson explains, “Mexican grandmas traditionally leave the avocado stones in the guacamole to prevent oxidation”. 

The coriander adds a sweet fragrant flavour and serrano or jalapeño chillies give your dip a good kick. What’s not to love?

As with any national dish, there are debates across the country about which ingredients should be included and what recipe is truly traditional. There is, of course, some argument to whether you should add tomatoes in your guacamole. However, if it works for Edson it works for us. 

As Chef Rick Martinez explains in Bon Appétit, tomato “is sometimes added to stretch a batch, add acidity, and avoid having to make a batch of pico de gallo along with the guac”. 

Why you’d want to avoid having a bowl of pico de gallo on your table is another matter!

The Method

Unlike shop-bought purée-style guacamole, Edson’s recipe is all about being gentle with the avocado, not over-mashing it, so it stays firm and chunky, and retains its sauve character. Marinating the onions in the lime juice and salting the tomatoes to remove the excess water will remove that up-front rawness from the ingredients and enhance the flavours of the guacamole even more. 

The Recipe

This guacamole features in Edson’s book, Ciudad de México: Recipes and Stories from the Heart of Mexico City, which is jam-packed with sumptuous dishes and drinks such as Baja Style Fish Tacos, Smoky Cauliflower with Pipián Blanco  and Margaritas de Jamaica.

Ingredients – Serves 4

¼ red onion, finely chopped

Juice of 1 lime

2 ripe tomatoes, halved, deseeded and finely chopped

2 ripe avocados, peeled and stoned

15g coriander, finely chopped

1 green serrano or jalapeño chilli, deseeded and finely chopped (to taste)

Fine sea salt

Method

  1. Place the onion in a bowl and pour over half the lime juice. Set aside.
  1. Place the chopped tomatoes in a bowl and sprinkle with a generous pinch of salt. Mix well, then pour the tomatoes into a sieve placed over another bowl. The salt will enhance their flavour and also cause them to release a watery juice. 
  1. Place the avocado flesh in a mixing bowl and add the rest of the lime juice. Use a fork to crush the avocado until it is mashed, but still firm and chunky – you don’t want it to become pureed or watery. Drain the onions and add them to the bowl, along with the drained tomatoes and coriander. Use a spatula to fold the mixture gently together without mashing the avocado further.
  1. Add the chopped chilli to taste and adjust the seasoning. That’s it. There’s nothing else to add – except maybe the avocado stone!

Common Mistakes To Avoid When Making Guacamole

Now you know how to make a great guacamole, here’s how not to do it…

  • Avoid choosing an under or over ripe avocado. You can tell if it’s ripe by squeezing the fruit gently. It should yield just a little, but certainly not feel mushy.
  • Colour is also a useful determinant of whether or not your avocado is guac-ready. The flesh should be on the darker side of green, rather than a light, almost yellow shade.
  • You can also check an avocado’s ripeness by peeling off the cap at the tip of the avocado. It should reveal a green hue. If the cap doesn’t peel off easily, it’s not ready. And if you’re met with brown, it’s likely to be several shades darker inside, which isn’t a good thing.
  • You should also avoid going too heavy on the lime, salt or any additional ingredients in your guacamole. This thing is about celebrating the avocado, after all.
  • Ideally, you’ll want to make your guacamole just before serving, to preserve its freshness and colour. Making guac well in advance will only lead to oxidation, and a loss of character and structure.
  • Whatever you do, do not add cheese, sour cream, or mayonnaise.

Leopardstown

Cross the Irish Sea to experience the thrill of the Leopardstown Christmas Festival, a highlight of the Irish horse racing calendar. This prestigious event kicks off on Boxing Day and runs over four action-packed days. Leopardstown, located just south of Dublin, is a beacon for racing enthusiasts and social butterflies alike, offering a blend of top-class racing, hospitality, and live entertainment. 

The festival atmosphere is electric, with the Leopardstown Pavilion buzzing with excitement as punters and families gather to enjoy the races. It’s certainly not harmed by the complimentary mulled wine and mince pies on arrival. As such, that popularity means it’s essential that you book well in advance to enjoy this horse racing betting spectacular. 

Kempton Park

It’s not just England’s north that knows how to throw a day at the races with all the pomp and ceremony which the festive season demands. Indeed, Kempton Park Racecourse in Sunbury on Thames, Surrey, just a half hour drive west of central London, throw one of the biggest events on the horse racing calendar. Boxing Day sees Kempton Park’s most popular race of the year, the King George VI Chase, which happens on the 27th too, for those who perhaps didn’t win as big on the sports betting as they were hoping to on the 26th!

Wincanton

Whilst it’s not obligatory that your Boxing Day Race location begins with a W, it certainly helps. Maybe it’s because W is for the ‘Win’…who knows? Anyway, Wincanton in Somerset is another hugely popular place for a day at the races, festive style. It’s also an event where kids (all the way up until 18!) go free, which makes it appealing for families. Indeed, it’s not just about the racing here, there’s also plenty of entertainment for the little ones and adults alike, including live music and loads of delicious refreshment options.

Ascot

Ascot Racecourse, synonymous with British racing royalty, offers a splendid day out with its own Boxing Day race event. Although not traditionally held on the 26th, the festive meeting at Ascot is an event not to be missed, usually taking place on the weekend closest to Boxing Day. This allows for a continuation of the holiday festivities in a setting steeped in history and grandeur. 

The racecourse is transformed into a winter wonderland, complete with seasonal decorations and a myriad of activities for all ages. Market Rasen

Huntingdon 

Rounding out our festive racing tour is Huntingdon. 8’000 attend this great Boxing Day event annually, held at Huntingdon Racecourse in Cambridgeshire, which sees seven huge races over the course of the day. Again, kids go free to this event and all of the family entertainment on the day, including inflatables and magic shows, is free, too. 

For the adults, the Peterborough Chase Champagne and Seafood Bar is the place to be; a glorious relief from the turkey and mulled wine of the previous day. Huntingdon is on the mainline from London’s King’s Cross, and is easily accessible from the station. A lovely day out, indeed.

Instead, all you need is a little creativity and a lot of enthusiasm and you can make your own casino night at home a huge success. With that in mind, here are 5 tips for hosting your own poker night.

Snacks & Setting

A successful poker night at home hinges on so much more than the game itself. Let’s lay our cards out on the table here; the difference between a flop and fortune isn’t found in the big wins and losses of the evening. Oh no. It’s in the vibe, the atmosphere and the tension of the game. And this is largely created and nurtured by the host, not the poker being played. 

First things first, no one wants to play poker (or sip that whiskey on the rocks) on an empty stomach; snacks and drinks need to be provided and replenished with fair regularity.

This doesn’t mean you have to go all out and provide a full meal, but having some finger food and drinks available will help keep everyone happy. If you’re not sure what to serve, ask your friends in advance if they have any dietary restrictions or preferences. Crisps, pretzels, popcorn, and a few sweets are all great options. And of course, cold beers are a must.

To further define the right ambience, some soft, meandering jazz seems to encapsulate the right spirit for an evening of poker.

Set Up The Game Space

To have a fun and successful poker night, you’ll need to set up the space properly. You don’t want any distractions during a tense game, so firstly clear any surfaces that will be used for gaming.

It’s essential to think about the rules of the game, too. You gather eight (the optimum number, we think) friends around the table. Pleasantries are dispensed with. The poker set is ceremoniously unboxed and….who actually knows how to play this thing? 

When curating your guestlist, you’ll need to make sure that at least some attendees have a good working knowledge of the rules of the poker discipline you’ve chosen (you did know there was more than one way to play poker, right) and are comfortable and conversant in how to manage a game. 

It might even be a good idea to first familiarise yourself with the ins and outs of standard poker variants to ensure you’re aware with the ins and outs of the game.

Know Your Limits

In the company of good friends and free flowing booze, it’s only natural that things get a little competitive. It’s important to recognise – and particularly for the host – when the frivolity has tipped over into something less fun. Even in the domestic setting, the spirit of the table can get out of hand and money can be lost. It’s wise, then, to set limits on maximum bets prior to the poker kicking off. 

It’s also sensible to ensure that, if you’re outsourcing the hosting of the actual games to an online platform, that the payments are speedy and efficient enough that guests can go home with their winnings.

To prevent things getting too intense and single minded, it could also be a good idea to set a finish time for the game, rather than letting it meander aimlessly into the small hours like that jazz you put on the stereo earlier. Everyone needs their sleep, right?

THE IDEAL RECIPE FOR BRAISED SWEET & SOUR PORK BELLY

Our pals at Waitrose share their recipe for Braised sweet & sour pork belly, and it’s a cracker. If you love unctuous, giving pork belly in a Chinese inspired broth, full of heady notes of five spice and the umami bomb of soy sauce, then this one’s for you.

  • Preparation time: 10 minutes
  • Cooking time: 2 hours 30 minutes
  • Total time: 2 hours 40 minutes
  • Serves: 4

WHAT YOU’LL NEED

1kg pork belly (from the meat counter)
2 tbsp Bart Chinese Five Spice
640ml bottle Tsingtao Beer
250ml malt vinegar, plus extra to taste
100g light brown soft sugar
4 tbsp Kikkoman Soy Sauce
Finely grated zest and juice 
1 extra-large orange
1 tbsp Bart Infusions Ginger Paste
3 tbsp vegetable oil
½ x 200g pack Waitrose Trimmed Sugar Snap Peas
½ x 200g pack Waitrose Trimmed Mange Tout Peas
½ x 200g pack Waitrose Tenderstem Broccoli Spears

WHAT YOU NEED TO DO

1. Preheat the oven to 170°C, gas mark 2. Cut the pork into 4 even pieces. Place all the ingredients but the pork, oil and vegetables into a large ovenproof casserole with a lid. Bring to the boil over a high heat, then carefully add the pork. Return to the boil, cover with the lid and place into the oven for 2 hours.

2. Remove the casserole from the oven and lift the meat out of the stock with some tongs. Set aside. Skim and discard any fat from the liquid. Bring to the boil over a high heat for 25-30 minutes until reduced and thickened.

3. Meanwhile, pat the meat dry with kitchen paper. Warm a frying pan over a high heat. Add 2 tablespoons of the oil, and fry the meat for 3-5 minutes until the skin is crisp. Turn over, and cook for a further 2-3 minutes, until piping hot and golden with no pink meat. Remove from the pan and keep warm.

4. Return the frying pan to the heat. Add the remaining oil. Stir fry the sugar snaps, mange tout and broccoli for 3-5 minutes until just tender. Keep warm. Serve the pork drizzled with the sauce and the vegetables alongside. Delicious with rice.

WHAT YOU’LL NEED

2-3 tsp Lee Kum Kee Chiu Chow Chilli Oil
1 tbsp Lee Kum Kee Pure Sesame Oil
4 cloves garlic, sliced
½ tbsp Sichuan peppercorns, ground
2 x 200g packs Waitrose & Partners No.1 Mixed Exotic Mushrooms,
roughly chopped
2 x 200g packs smoked tofu, cut into 1.5cm cubes
1 tbsp Cooks’ Ingredients Tamari Soy Sauce, plus extra to taste
3 tbsp Lee Kum Kee Premium Oyster Sauce
2 tbsp Cooks’ Ingredients Chinese Rice Vinegar
Steamed white rice, to serve
10g coriander, roughly chopped
1 tbsp black and/or toasted white sesame seeds

WHAT YOU NEED TO DO

1. Heat the chilli oil and the sesame oil in a large wok over a high heat until lightly fragrant, then add the garlic, ground pepper and mushrooms.

2. Cook for 5 minutes, turning constantly, until the mushrooms are golden.

3. Add the tofu and fry for a minute before adding 1 tbsp soy sauce, the oyster sauce and rice vinegar. Continue to cook for 5 minutes, then remove from the heat. Add more soy sauce to taste.

4. Serve over steamed rice, scattered with chopped coriander and sesame seeds.

We think it’s because the humble bird is so often done so wrong. If you want to start doing it right, right now, then here are 7 tips for the IDEAL roast chicken.

NOT ALL BIRDS WERE BORN EQUAL

We’ve all heard foolish folk on Come Dine With Me wheel out the tired old line about chicken that’s been given hourly massages and music to listen to; hell, we’ve probably made the claim ourselves at a dinner party we’re hosting. Whilst that level of poultry based pampering might be an exaggeration, if you want to eat well, you’ll want your chicken to have lived well, too. 

TIME TO BRINE

Once you’ve forked out on something your fork will truly appreciate, it’s time to give the bird a salt water bath. Brining (in a 5 – 8% salt and water solution) tenderises the meat through the salt breaking down muscle fibres. Your chicken will also absorb some of the liquid, making for a juicy end product. You’ll want to boil the brine briefly to help the salt (and sometimes sugar) dissolve, then allow it to cool completely before immersing the bird in the liquid, placing in the fridge and leaving to work its magic overnight.

Trussing is another important step in the pre-cooking process, as tying the bird up prevents it taking flight and escaping from the oven. Jokes, aside, it’s believed to help the breast and leg cook evenly and in harmony. Tucking the wings under the chicken prevents them from burning. Many chefs swear by dunking the trussed chicken briefly in a large pan of boiling water a couple of times, to tighten up the skin. It works for us, but obviously you should skip whatever steps you wish if time isn’t on your side.

DILIGENT DRYING

With all the brining and dunking going on, your bird is going to be a little wet. That’s all well and good, but we need the skin to be dry if it’s going to crisp up nicely and go that lovely golden colour of a pornographic Marks & Spencers ad. Placing on a wire rack, over a tray, at the foot of the fridge for an extended period seems the best way to go.

ADD FAT, AND ADD IT AGAIN

The choice of fat you use is up to you (and your waistline) but a decent smothering of goose fat, butter or olive oil – applied all over the bird’s exterior – is a must. The fat will help the skin to crisp and give it a wonderful rich flavour. Of course, season liberally with salt and pepper too, inside and out. During the cooking process, basting the bird at fairly regular intervals with the schmaltz that has accumulated in the roasting tray will add even more flavour. Stuffing, fresh herbs, flavours, trivets….it’s all in the preferences of the chef.

ROAST TO THE RIGHT TEMPERATURE

Low and slow or hot and fast, the choice is yours. What matters is that the internal temperature reaches (and this is a matter of debate) somewhere in the 63°C region. You’re cooking at home, not to over cautious government food safety guidelines, so it’s best not to decimate your bird by trying to reach 75°C. If you opt for slow cooked (extremes suggest 4-6 hours on as low as a 60°C oven temperature) you’ll want to either turn your oven up high at the end of the cook to initiate a goldening of the skin, or alternatively take the chicken out, insert some tongs up its rear, and brown the bird on all sides in a frying pan. If this sounds a faff, traditional roasting dictates about an hour and ten minutes on 190ish, and a final fifteen on 250, again, ish.

REST WELL

The final step is perhaps the most often neglected; your carefully shopped for, brined, trussed, tucked, dunked, slathered, salted, seasoned, roasted chicken needs a rest. It’s been a lot of hard work up to here, and the juices need redistributing. If not, when you cut to the carving, moisture otherwise destined for your tongue will escape all over the chopping board, never to be reintegrated. Rest under foil to retain even more moisture, or rest uncovered to keep the skin at its crispest. Again, the choice is yours.

THE IDEAL RECIPE FOR CHEESE LOVERS: BAKED SOMERSET BRIE BY PAUL HOLLYWOOD

This is an excellent way to enjoy one of those excellent Bries produced in Somerset and Cornwall. Don’t be tempted to cut it as soon as it comes out of the oven, or the molton Brie will flood out, leaving you with an empty shell. If you serve it just very slightly warm though, you will have a deliciously oozy cheese. Paul Hollywood shares his recipe for baked Somerset brie with IDEAL

Enriched bread dough

  • 250g strong white bread flour
  • 1 tsp salt
    7g sachet instant yeast
    50g unsalted butter, softened
    1 medium egg, lightly beaten, plus an extra egg to glaze
    135ml warm full-fat milk

Filling

  • 180g Parma ham (or British air-dried ham)
  • 2 tbsp cranberry sauce
  • 1 whole Somerset or Cornish Brie (about 500g)

Cooking Time: 20-25 minutes Servings: 4-6

Method

  1. Put the flour into a large bowl and add the salt on one side, the yeast on the other. Add the butter, egg and two-thirds of the milk, then turn the mixture round with the fingers of one hand. Add the remaining milk a little at a time, continuing to mix until you have taken in all of the flour from the side of the bowl and the dough is soft and slightly sticky; you might not need all of the milk.
  2. Transfer the dough to a lightly floured surface and knead for 5-10 minutes. Initially it will be sticky but it will become easier to work as you knead. When it feels smooth and silky, put it into a lightly oiled bowl, cover and leave to rise for about an hour, until doubled in size.
  3. Heat the oven to 200°C/Gas6. Turn the dough onto a lightly floured surface and fold it in on itself a few times to knock the air. Now roll out to a large circle, about 5mm thick.
  4. Lay half the Parma ham on the centre of the dough circle, then spread the cranberry sauce over the ham. Place the Brie on the top and use the remaining ham to cover the cheese. Lift the edges of the dough over the filling and stretch to encase the cheese. Press the edges together to seal, trimming off any excess.
  5. Turn the Brie parcel over, so the join is underneath, and place it on a baking tray. Brush with the beaten egg. Using the back of a sharp knife, score a criss-cross pattern over the top of the Brie parcel. Bake for 20-25 minutes, until golden brown. Allow to cool until just warm before serving.
