UK house prices are rocketing. According to Nationwide’s House Price Index, house price growth in February 2022 grew by 12.6% year on year (£29,000), up 1.7% on January. 

HM Land Registry’s January figures paint a similar picture, with UK prices rising by 9.6% annually to an average price of £273,762. 

And with rising inflation predicted to drive up house prices further, if you’re looking to get a foot on the property ladder in the coming months or years, you might be feeling a little despondent.

With higher prices come larger deposits, with this particularly affecting first-time buyers who don’t have a ready cushion of equity to use for their purchase. 

Rather than 10%, many lenders are now asking for people to front a 15% deposit or more for their home due to economic uncertainty and the spectre of rising inflation. Additionally, pandemic saving has allowed many buyers to save up much larger deposits than before, leading some lenders to beef up their lending criteria.

They go on to report that men are twice as likely to injure themselves than women, but really, this is a risk that hangs over every home workout, regardless of gender.

The first and most important step is to consult your GP or the medical professional you were referred to who helped your rehabilitation from injury. This will likely be a physiotherapist.

Often, this might involve a graded return to activity, which will consider your injury, age and overall fitness levels.

Though you may feel like you’re ready to return, you’ll only know when it’s the right time to do so after speaking to your doctor, who will be able to assess your injury and let you know the exact point of your healing progress. As much as it is a cliche, always follow your doctor’s orders, first and foremost.

Ease Back Into Things

Once you’ve got the go-ahead, don’t try and do too much too quickly, however tempting it might be. This is a common mistake that many people make – believing that they can return to their old personal bests – but it can often do more harm than good. Remember, you want to be able to sustain your training and not aggravate the injury further, and this is only possible by taking a measured approach.

Start by slowly reintroducing some basic exercises into your routine. This can be as simple as walking or cycling at first, allowing you to gradually increase the intensity and duration of these activities as and when you feel more comfortable.

If your injury is more severe, you might need to start with more basic exercises and work your way up. Again, it’s important to listen to your body and not push yourself too hard.

This tip applies to any form of exercise, whether cardiovascular or resistance training. You won’t be able to run the same times, or lift the same weights, as pre-injury – it does take time. 

Proper warm-ups and warm-downs will also be more essential than ever before, as well as stretching sessions in place of some workouts to further supplement your gradual, sustainable return to training.

Mentally Prepare Yourself

Returning to training after an injury can be a daunting prospect, both physically and mentally. It can often feel like you’ve taken a step back, which can be frustrating, demoralising, and demotivating.

You must take the time to mentally prepare yourself for the challenge ahead. This means setting small goals, being patient and staying positive.

Visualising yourself completing your rehabilitation work and then returning to your previous level of training can be a huge help. It’s also important to have a support network, whether friends, family or a sports psychologist.

Mine’s a double, barkeep! We had you for a minute there, didn’t we? But nope, we’re not ordering a ruinous tequila, but rather, a shot of delicious espresso. Could there be any better pick-me-up? We certainly haven’t tried it. Deliciously thick, smooth and strong when done right, it’s one drink that just always seems to taste better when made by your favourite barista. But it’s time to change all that. Amazing coffee can be created from the comfort of your home or commercial space, by your own fair hand and with just a few pointers. These are those; our 5 IDEAL tips for perfect espresso shot.

GOOD QUALITY WATER  

Since water is only one of two key ingredients in your coffee, it’s imperative you choose good quality stuff if you’re serious about flavour. Water test kits can be easily bought online to check the water quality you use, and action taken accordingly to arrest an excess of acid or alkaline that you might have revealed. Never use distilled water because the majority of espresso machines get damaged by it.

A carbon filter is a good idea to remove contaminants and impurities. However, if the water is of poor quality, then you may need to use purifying tablets or simply boil it prior to use. Then, allow it to cool as the water has to be at room temperature, since an espresso machine deals with the heating.

IT’S ALL ABOUT THE COFFEE 

Good espresso starts with good beans, naturally. Indeed, finding the right coffee bean for you and your specific taste is essential to preparing the perfect beverage every time. However, it’s all personal preference, so get familiar with your preferred brand ahead of time. For us, a medium espresso roast is best. However, according to connoisseurs, to get the very best shot of espresso at home you must grind your own beans. 

Making espresso needs finely grounded beans, akin to the texture of table salt, and sadly, store bought espresso rarely comes at this optimum grind. If you want maximum flavour (and you do, that’s why you’re here) then the beans have to be freshly ground. That almost gold crema which collects at the top of a fine restaurant or coffee shop espresso? That’s indicative of a freshly ground bean. 

THE EQUIPMENT  

Speaking of grinders, if you’re going to do it yourself (and you should) then get a decent one that’s been recommended specifically for espresso making. In doing so, you’ll maximise flavour and freshness. There are two main types of grinder; blade, which are cheap and cut beans inconsistently, and burr, which, while more expensive, are worth the investment if you want the perfect espresso shot. 

Choose a specialized espresso machine with quality structure and components along with an exclusive pressurized system, but if you’re looking to make more than just espresso go buy a cappuccino maker or a latte machine which also has an espresso function. This will allow specialised drinks at just a single press of button. 

Above all, keep your equipment and machine clean. You wouldn’t reuse an unwashed coffee cup, and coffee oils and grounds which built up over time will taint the taste of your coffee. 

CONSISTENCY MATTERS 

Nevertheless, to pull perfect espresso shot, you need to consider several things. The first one is consistency. The recipe, technique, and equipment used don’t matter if things are inconsistent. Indeed, a focus on uniformity is essential. Do things exactly, in the same manner every time, except when you experiment with variables. A gram weighing scale ensures every ingredient is correctly measured, and only when you change one variable at a time will you be able to truly perfect your shot.

GET THE PROCESS RIGHT

Making espresso is instant, but the machine needs to have been given sufficient time to get heated; keep this in mind. It takes 10 minutes (small espresso machines) to 1 hour (large commercial machines) for a machine to be ready to produce the perfect shot. Each machine works differently, so check the manual to get an idea of the time needed to heat it initially. As above, always measure your coffee and compress the coffee evenly with the tamper, as this releases the coffee flavours and taste properly. 

Interestingly, the taste will ultimately reveal if the amount of coffee and grind size were correct or not. If the size is coarse, the taste may be sour, due to the short brew time required for a larger grind. On the flip side, if the size of your grind is very fine, the flavor may be bitter, due to the longer brewing time. Acknowledge these incrementals each and every time.

This means that you need to have reliable fire starters with you at all times. Lighters run out of fuel, and matches are easily damaged by moisture, so it’s good to have a back-up. Consider investing in a ferrocerium rod and some tinder. A ferrocerium rod (sometimes simply called a ‘fire steel’) is a small, handheld tool that can create sparks even when it’s wet. This makes it the perfect no-fuel fire-starting tool.

Tinder is material that catches fire easily and burns hot and fast. It’s essential for starting a fire, but it can be difficult to find dry tinder in the wild. You can buy tinder online, or you can make your own by collecting dried leaves, grass, bark, and other materials. Hey, you could even use your used matches as extra tinder (and we’ve suddenly realised that’s why they’re called ‘matches’ on Tinder…mind blown!).

If you’re going to enjoy an adventure off-grid with a modicum of comfort, you need to be prepared for all weather conditions. This means that you need to have a good sleeping bag. Even if you are exposed to the elements or sleeping in colder conditions, a good sleeping bag will keep you safe and warm. 

Bring at least one heavy-duty, dependable winter bag, but also think about bringing a lighter sleeping bag for warmer weather. And don’t forget to bring a nice blanket, too, for those in-between season nights.

5 IDEAL SPRING VEGETABLES AND HOW TO COOK THEM

Spring has well and truly sprung (finally) and with it a whole host of new fruit and vegetables are coming into season, at their peak and tasting truly vital and vibrant. And that’s what this season is all about, right? We just can’t wait to get into the kitchen, basket of fresh produce in our arms and a song of optimism in our hearts. And here’s what we’ll be cooking when we get there; our 5 IDEAL spring vegetables and how to cook them.

ASPARAGUS

You can get your hands on asparagus from February to June, but April is their peak season. As such, you’ll have seen your Instagram alive with cheffy shots of this much loved veg, and your bathroom replete with the curious aroma it leaves lingering, too.

In terms of cooking it, asparagus is only around for a very short while, and takes two years of careful cultivation to grow, so show it some respect. We’d recommend ignoring the conventional wisdom that ‘snapping’ the stalk will somehow – automatically and every time – indicate the correct place where woody becomes palatable. It wastes a lot of the good stuff, the stuff we’ve waited almost a year to eat. So, simply cut an inch or so from the bottom of the stalk and then gently peel the lower end until you have dispensed with the stringy parts and reached the tender interior.

We like to retain the fresh snap present in asparagus’ raw form, as well as its splendid green colour, so a quick blanch of a minute or two in a rolling boil of salted water should do the trick. You could enjoy immediately at this stage, or a quick griddle to add a smoky note and pleasing char marks works wonders, too. Parmesan and poached eggs are a wonderful accompaniment, as is anything fishy.

JERSEY ROYALS

Man, we love jerseys. So earthy, so sweet, with a pronounced, buttery texture. These guys aren’t in season for long, so it’s important you make the most of them. Forget peeling; their skin is brittle and it’s an arduous, unnecessary task. Instead, simply wash away any dirt under a running tap.

Start with a pot of salted, cold water and add the potatoes (adding to already boiling water may cause them to crack). Cook for approximately 15 minutes, until tender, checking regularly around this time with a knife; there should be no give when one is inserted. Once drained, they are best enjoyed fairly unadulterated. A simple salad of sliced spring onions and a vinaigrette lightly thickened with mayonnaise should bring out the best in this wonderful potato.

Or even more simply, butter and some finely sliced chives is alchemy where the jersey royal is concerned. Fish pairs beautifully with such a salad.

RADISH

Peppery, grassy, crunchy; the radish speaks of Spring and verve and fresh starts. When enjoyed raw (after a quick wash, of course) they are positively spicy, so slice super thinly if they’re to adorn a salad.

Cooking brings out a little of their sweetness and tames their kick while pickling creates a sweet and sour interplay which works so well with radishes’ crunch. This treatment, if using red wine vinegar, intensifies their colour to a vivid pink; perfect if aesthetic considerations are in mind.

MORELS

Restaurants across the country are celebrating as morels, the curious honeycomb-like wild mushroom, has emerged victorious from another lengthy hibernation. Now is the time to enjoy them, as at their best there’s little in the fungi world which can match their deep, earthy flavour and glorious meaty texture.

First things first, these guys are mildly toxic, so shouldn’t be eaten raw. The cocoons and crevices of their unique composition can house a fair bit of grit, so just before you’re planning to cook, give them a good shake in a colander then a very brief rinse in a bowl of cold water, swishing quickly with your hand to release any trapped dirt. Unfortunately, due to all their nooks and crannies, the usual brush treatment applied to other wild mushrooms simply doesn’t do the job here. You can half them if you wish, or keep whole; a question of presentation as much as anything else.

Once ready to cook, a quick, simple fry in a hot pan with nut brown butter brings the best out of the morel. Be sure to drain them on a paper towel afterwards. Enjoy simply on toast or with meat of the season; wood pigeon or spring lamb, perhaps.

PURPLE SPROUTING BROCCOLI

Purple sprouting broccoli has become so trendy in recent years that chefs have given it a pet name; P.S.B is now seen on many a small-plates, concept led menu, and we at IDEAL couldn’t be happier. The slightly bitter, supremely fresh flavour tastes ultra-healthy, kind of refreshing but with enough assertiveness to marry well with strong flavours. And that’s some mean feat.

To prepare, divide into individual florets, simply shorten the stalks a little and steam for a few minutes, until tender but with a little bite. Or, simply stir fry in a hot, hot wok; these guys benefit from that hint of smoke that this kind of cooking brings. P.S.B is amazing topped with anchovies, and then served either as a side dish to a piece of lamb or with spaghetti.

It’s 2022 and uncertainty reigns supreme. The easing of some restrictions doesn’t mean that travel has returned to anything resembling normality, and, in many cases, post lockdown holidaymaking still looks very different to trips taken pre-pandemic. 

The pandemic feels far from over, so first things first, it’s worth checking the UK government’s guidance on travelling abroad before booking a holiday anywhere. Pre-Book Everything You Can

Flying can be stressful at the best of times and with all the COVID restrictions on top of the usual rigmarole, well let’s just say cortisol levels can go off the chart.

So, first things first, from PCR tests (more about that later) to seats on the plane, all the way to airport parking and transfers; simply put, pre-booking as much as you can, as far in advance as you can, will save you a lot of hassle.

When To Get A PCR Test For Travel?

Every country has different entry requirements when it comes to COVID-19, as we’re sure you’re aware. While restrictions have certainly gotten a little looser and some destinations may not require evidence of a recent negative COVID-19 test, others require proof of such a test being taken 72 hours before your departure time. 

If you have not received any doses of a vaccine or have only received 1 of 2 doses, you are considered to be unvaccinated. To avoid room for interpretation, as explained by the Independent, the definition of fully vaccinated “requires travellers aged 18 and over either to have had their initial vaccine course within the past nine months, or to have received a booster”.

It is always best to research before you fly to be made aware of any sudden changes. There are lots of different test sites available across the country, and it’s likely there will be on close proximity either to where you live or where you’re flying from. If you’re travelling from a London airport like Gatwick, google ‘PCR testing Croydon‘ where you can find nearby laboratories that offer ‘Next Day RT PCR tests’, ’12-14 hour RT PCR tests’, and ‘express PCR tests’ where you can get your results in as little as 1-3 hours.

The Right Facemask 

Recently, many major airlines have started to ease rules on wearing masks in flight. However, other carriers are still pretty strict. As such, it can be tricky to keep track of the different policies. Indeed, as anyone who has searched Google will know, the current guidance can be a little hazy.

While British Airways, Virgin Atlantic, easyJet and Tui have all dropped their mandate to wear masks on some routes, wearing a mask on other carriers is still mandatory. Also, masks are still required in most UK airports for passengers over 11 (unless medically exempt of course), though not in some other airports on arrival. Confusing right? 

While we’re seeing a surge of people wearing the classic blue surgery mask, they aren’t the best for travelling in as they offer less protection when compared with medical-grade masks, such as and N95 mask or FFP2 (otherwise known as a filtering facepiece respirator). 

The WHO have cited several studies that show the filtration systems of FFP2 and N95 masks are 94% and 95% effective, respectively. That said, you’ll need a comfortable mask to travel in as you’ll be wearing it for a prolonged period of time, too, so perhaps consider this list of the most comfortable masks for travel.

Sanitise It

We’re surprised this didn’t apply to every journey in the days before COVID, but even more pertinent now is the necessity for a bottle of sanitizer and some antibacterial wipes when onboard and in flight. 

Be sure to opt for the wet wipes that contain antiseptic, not just those common ol’ beauty ones, as the latter doesn’t offer much in the way of protection. When onboard, clean your seat, tray table and belt buckle, at the least, giving you protection and peace of mind

Getting comfortable on a flight during COVID times can be tough, as you’ll (likely) be masked up and generally feeling a little more on edge than usual about travel.

Set A Bedtime That You Will Commit To

One of the biggest mistakes people can make is not having a set bedtime. If you’re the type that goes to bed at different times each night, how can you possibly create a schedule or a habit conducive to sleep? Here’s a clue; you can’t.

Human beings are creatures of habit, and the body’s internal block is an incredible thing, as long as you train and nurture it. By maintaining a regular sleep-wake schedule, your circadian rhythm can do just that; get into its own rhythm. 

With consistency and routine, your brain will start to learn precisely when to start making you feel sleepy each night, by producing melatonin, a natural hormone that helps regulate your circadian rhythm and facilitates a natural, easy transition into sleep. Get Rid Of Digital Distractions From The Bedroom

Digital distractions can be a huge deterrence to good quality sleep, and not just because they can overstimulate you in the run up to bed (though we have to admit we’ve stayed up way later than we should waiting for a new episode of Succession or to binge watch Top Boy). 

The biggest risk to your sleep in terms of your devices is actually the blue light they emit. This blue light disrupts your brain and body’s ability to prepare for sleep by blocking the sleep-inducing hormone melatonin. Conversely, when it’s dark,  your brain starts to release melatonin, which readies your body for sleep. 

As the Sleep Foundation so succinctly puts it, ‘’Darkness prompts the pineal gland to start producing melatonin while light causes that production to stop…In doing so, it facilitates a transition to sleep and promotes consistent, quality rest.’’ 

Accordingly, any electronics that emit bright blue light, like the phone and TV, simply shouldn’t be in your bedroom in the room up to bed. As part of your pre-bed routine, plug your smartphone in somewhere else, turn the television off, and opt for activities that don’t involve a screen at all, such a yoga, meditation or reading.

Choose Calming Drinks And Food Before Bed

This is also a good time to look into what you eat and drink before bed, as the stuff that’s swilling around in your stomach (and stimulating your brain) could well be harming the quality of your sleep, too.

Caffeine and alcohol are a particularly bad idea in the evening, as both can wreak havoc on your sleep. Instead, go for a soothing herbal tea (chamomile is particularly well-regarded as having relaxing qualities) or a natural sleep drink that contains l-theanine, which is recognised for its potential calming effects.

Some sleep-positive foods worth trying include bananas, cherries, walnuts, almonds, kiwi, fatty fish (herring, salmon or sardines), cashews, pistachios, oatmeal and yogurt. Again, stay away from any food that is high in sugar in the run up to bed.

Turn Down The Temperature In The Evening

Finding the perfect temperature for sleeping can be a bit of a process but it’s well worth persevering with it. You don’t want the room to be too hot, yet you should not be shivering, either. 

Experts suggest the bedroom should be a cool but comfortable 16 to 18°C (60-65°F). If you have a programmable thermostat, regulating your room temperature is a breeze; you can set the evening temperature to be different from the daytime temperature, and carefully manage the ambience in your bedroom. 

If not, simply leaving a window slightly ajar in the lead up to bed during the warmer months usually does the job, though you may need an additional fan in summer and a thicker duvet in winter, too.

Ingenious Grilling Techniques From Around The World 

Ideal for upping your barbecue game this summer

As the late chef and food writer Anthony Bourdain once so sagely said, ‘’Food may not be the answer to world peace, but it’s a start.”

Bourdain also once posited that “the way you make an omelet reveals your character”, but we think that statement applies just as pertinently to the way you conduct yourself around the heat of the barbecue.

And whilst breaking bread is often seen as the most symbolic of levellers, we think there’s much to be said for the allegorical power of the grill, too. Steeped in tradition, this oldest of cooking methods is something to be respected, with its elemental unpredictability connecting us both with our past and our fellow man. Because when the flame is burning and the meat sizzling, there’s so much more that unites than divides us.

Over thousands of years, barbecuing techniques have been developed, both locally and globally – some shared, some unique to a specific region, city, or even village – to finesse the grilling experience down to a fine art.

Today, we’re exploring just a handful of our favourites; here are some ingenious grilling techniques from around the world, IDEAL for upping your barbecue game this summer.

The Basque Country – A Simple Spritz Of Vinegar 

As an article by the BBC on the origins of barbecue culture put it, ‘’Basque cuisine is an exploration of just how far wood, smoke and flame can be taken as a cooking technique’’.

And it’s at two revered restaurants within 55km of each other that modern Basque barbecue cooking is perhaps most famously celebrated. The first, Asador Etxebarri, is the holder of a Michelin star and is currently ranked as the third best restaurant in the world. 

Here, the legendary chef Victor Arguinzoniz has designed a whole host of ingenious grilling contraptions, including grill baskets, clamps, perforated frying pans, and even specially designed built-in grills whose height you can adjust with an intricate pulley system.

That said, you don’t need all of that kit to recreate the essence of Basque grilling at home. In fact, the secret to the success of this style of barbecue lies in something much more manageable; a simple spritz of vinegar. 

This method is particularly useful when grilling whole fish, as they do at Elkano, just a short drive from Asador Etxebarri, in the coastal town of Getaria. Here, the grill chefs are as skilled with a spray bottle as they are with the tongs and spatula, periodically spritzing the skin of the fish with a vinaigrette to stop it from drying out and to, simultaneously, gently season it. 

As the fish releases its juices and gelatine as it cooks, this combines with the vinaigrette, creating one of the most gorgeous sauces you’ll ever taste. 

The exact recipe for the vinaigrette at Elkano is a closely guarded secret. Known as ‘’Lourdes water’’, only the senior chefs are privy to the exact ingredients and ratios involved. If you’re trying to replicate this at home, however, we’d suggest olive oil and white wine vinegar at a ratio of 3:1, shaken together until emulsified.

Vietnam – An Ingenious Use Of The Domestic Fan

Though Vietnam’s most famous culinary exports are undoubtedly the world-conquering noodle soup phở and perhaps the greatest sandwich to ever do it, bánh mì, another dish that’s gained global recognition is bún chả, a gorgeous bowl of grilled pork patties and thinly sliced pork belly, cold noodles, a uniquely flavoured dipping sauce, and plenty of herbs.

The dish has been served on the streets of Hanoi for centuries, but in 2015, when our old friend from the introduction, Anthony Bourdain, and the then president of the USA, Barack Obama, shared a meal of bún chả on the former’s TV show Parts Unknown, international interest in the dish sky-rocketed.

What that particular episode didn’t show you, however, is the ingenious grilling technique used to impart ultra-smokiness into those grilled pork patties and strips of belly. It’s simple; a domestic fan is set up on rotation behind a basic, compact grill, sending a particularly alluring smoke billowing into the air and tempting those cruising by on scooters to pull up and have a try. 

The effect is to keep the smoke rising in an almost continuous stream, whilst helping to temper the burn of the charcoal, distributing heat evenly, which is ideal for cooking slivers of pork belly and single patties that might otherwise overcook and dry out. In smaller street grilling operations in Hanoi, the cook will simply use a handheld bamboo fan.

Either way, the effect is tender, juicy meat that tastes both of itself and of the grill. No wonder Obama was such a fan.

Papua New Guinea – The Layers Of Mumu

Underground ‘pit’ cooking provides the foundation to some of the world’s most beloved barbecue dishes, from Mexican barbacoa to Indian tandoori, stopping off in Hawaii for kalua pork along the way.

But perhaps the most ingenious version of this universally loved cooking style is found in Papua New Guinea, and the national dish mumu. Here, as is tradition across the world, a makeshift oven is made by digging a large, deep pit into the ground, big enough to receive a whole pig and a generous quantity of root vegetables and tubers, such as sweet potato, yams, yucca root and taro. Layers of fruit are also added, bringing bright acidity and helping tenderise the pig.

Then, the pit is lined either with hot stones or coals, ensuring a radiant yet regular heat is maintained for the duration of the cooking process. Next, a generous thicket of grass and a layer of vegetable fibre sacks are added, acting as a buffer between the hot stones and the parcel of food, protecting the pig and its companions from fast-acting direct heat (we want this thing to slow cook, after all).

Now, the pit is ready to receive the pig, vegetables and fruit, which have been wrapped in banana leaves to further insulate them and provide an environment for steam, once again protecting the meat from drying out. Banana leaves also impart a gentle aroma and flavour to the finished product. Some areas then cover the pit and parcel with soil, whilst for some tribes within Papua New Guinea, this is viewed as taboo. 

Regardless of how you play it, the results (after several hours of low and slow cooking) are incredible. And the laborious nature of the preparation is actually an advantage, viewed as an opportunity for the whole family, or even, the whole village, to get together and muck in. The rewards are well worth it!

Argentina – Grilling A La Cruz

We simply couldn’t write an article about global grilling without mentioning the iconic Argentinian asado, a celebration of grilled meat so beloved of the country (and its neighbouring Chile and Uruguay) that it’s basically a religion here.

To the untrained eye, it may look simple, but there’s huge amounts of skill involved in the art of maintaining an asado so that all the different cuts of meat cook perfectly over the course of a long, glorious day or eating and drinking. Fast food this ain’t. 

It’s in the grilling of larger cuts as the meal’s headliner – often beef ribs or a whole flayed lamb – that the real ingenuity of the asado occurs. Such cuts are usually grilled a la cruz, attached to an iron cross using hooks and grilled upright away from the direct heat of the fire. Occasionally, a little salmuera (a basic brine) is used to baste the meat, but that’s all, allowing the flavours of the animal and the asado to truly to shine.
